We have this on thinly sliced fresh HM granary bread. We cut each slice into 8 small triangles, season with lemon and pepper, and serve informally on a big plate for everyone to help themselves, with a bottle of champagne.

Smoked salmon pancakes are my favourite. Make pancakes as normal and fill with a mixture of chopped smoked salmon, chopped spring onion & creme fraiche. Season well with lemon juice & black pepper. You can make the pancakes and the mixture on christmas eve & keep it in the fridge until you need to assemble it just before lunch.0

If it's a starter you're after I would whizz up a bit of the salmon with cream cheese, lemon, pepper and horseradish to taste. Then put a dollop in a small sheet of smoked salmon, gather up the ends and tie with some chives to make a little parcel. Garnish with lemon and cucumber and serve with some melba toast.0

Not finger food but very quick + easy. Simply serve smoked salmon with a dollop of creme fraiche thats mixed with a good shake of black pepper + a good squeeze of lemon juice. Serve with a wedge of lemon.0

We always have ours on wheaten bread (common in Northern Ireland, here in England I'd just used brown bread) with lots of butter and a squeeze of lemon juice. Smoked salmon is so nice it doesn't need anything else - and you'll probably have enough to do anyway without doing something posh with it!0

I do something similar, but mix the cream cheese (or creme fraiche or fromage frais or mascarpone) with chopped chives and spread it on salmon strips cut to rectangles. the cut-offs also go in the cheese mixture. Then roll the rectangles up like Swiss rolls and tie each with a long chive."Remember that many of the things you have now you could once only dream of" - Epicurus0 -
Having friends (ten of us) round on New Years Eve and want to do a really nice meal.
Any ideas for a starter including recipe - hoping to make a cold one so i can use the oven for something else.
