Leek and Potato Soup

    I also do "just" leek soup. It is superfast - very good for quick Saturday lunch.

    Put some butter into a saucepan, heat it up and add chopped leeks. cover with lid and sweat it a bit.
    Add stock made out of 1 chicken cube.

    Prepare small frying pan, put a bit of butter in and heat up. Then add flour - only enough to cover the butter, the pan shouldn't go dry by this. the flour mixed with butter should be now bubbling a bit. break an egg into cup, add a bit of salt (you don't have to if you are using slightly salted butter in the pan) and pepper. Pour quickly over the butter&flour mix and mix it all together, just like you would be cooking scrambled eggs. Now the pan should go dry and the final result should be lots of little bobs of this mixture (looking a bit like overcooked scrambled eggs:-)). If not just separate them with a spoon to make smallish bobs.
    I don't know how you would call this, it is foreign recipe. But you can of course use this instead of noodles in any kind of consome soup - chicken, beef, anything really.

    Add this into the boiling leek and stock and cook for few minutes.
    The soup is ready.

    Hiya im up nice and early today so have decided to make leak and potatoe soup in my SC for tea tonight - have put some soup mix in some leaks and potatoes is there anything else i should add as i feel like it might be a bit band - any ideas???

    I have onion and garlic in mine and use some bouillon or stock.

    oohh onion sounds good - have put stock in but no garlic - should this be ok with this tatse ok ?

    If you don't like garlic then no it wont be ok.

    I fry off onions, garlic, leaks and potatoes.
    Add stock, simmer for 20 minutes or thereby, blend.

    i like garlic - just dont have any and im cooking it in my sc - just chucked some onions in and will see what its like when i come in from work

    ok yesterday i decided to make leak and potatoe soup in my SC added some dired soup mix i had soaked overnight 2 leaks and 3 potatoes some onion 2 stock cubes and coverd with water - came home from work to a lovely smell but it was all grey and looked burnt - was it not enough water or did i leave something out ?? i didnt think stuff in the SC would burn?

    may not have had enough liquid it can burn on bottom if you can have different temperatures if too high and not enough liquid

    This L&P soup recipe doesn't take long enough to need the slow cooker.

    LEEK & POTATO SOUP

    Serves 2

    INGREDIENTS
    250g of leek
    250g of potato
    1 tablespoon of oil
    400ml of water
    1 vegetable stock cube
    100ml of milk
    Ground pepper to taste

    METHOD

    Wash the leeks and chop the bottom off, then chop them (see below) into 1cm (½ inch) pieces. Peel the potatoes and chop them into 1cm (½ inch) cubes.

    Put the oil into a saucepan on a medium heat. Add the leeks and fry them for about 10 minutes. Stir frequently to stop them sticking or browning.

    Add the water, stock cube and potatoes. Stir thoroughly.

    Bring to the boil, then turn down the heat until it is just boiling (simmering). If you want the potato to stay chunky, cook for about 15 minutes until the potato is just soft. If you want to mash the potato, cook for about 20 minutes.

    If you have a food processor, put the soup in it and blend it to the desired consistency. If you have a hand blender, put it in the soup and blend it to the desired consistency. If you don’t have a food processor or hand blender, use a potato masher, press the soup through a sieve with the back of a spoon, or leave it lumpy.

    Just before serving, add the milk. Season with the pepper. Stir thoroughly.

    ADDITIONS & ALTERNATIVES

    Add a clove of garlic or ½ an onion, finely chopped, at the same time as the leeks. Substitute the milk for crème fraîche or single cream.

    TIPS

    The easiest way to chop leeks is to slice each one lengthwise into four (which makes it look a bit like celery) and then chop them from top to bottom.
    The acquisition of wealth is no longer the driving force in my life. :)

    Hello Cady - Don't give up! Just my humble but maybe you didn't need the soup mix. Potato is usually enough to thicken the soup.
