Leek and Potato Soup

  • I love HM leak and tatty soup started making it 8 years ago when i had my first daughter.

    I just make mine without weights etc the following so i apologise for lol

    I use a knob of butter and a splash olive oil
    1 chopped small onion, fry onion until just going soft add

    3-4 leeks chopped
    3 large potatoes cubed cook for 2 mins add
    vegetable stock or one veg oxo cube:eek: i know naughty me

    I then bring to boil then simmer until potatoes cooked.
    I then remove 1/2 the soup and blend to fine then mix back with the course soup if i have a cream open i will add a little of that too to taste.
    I also sprinkle a little grated cheese to serve and have fresh bread out the oven a tear and share HM

    It freezes just fine not that i often get to freeze it.

    I do the same as Thriftlady but don't use bacon in mine - I also put in a bouquet garni and 2/3 bay leaves - Also, I use a potato masher at the end rather than a blender so you get a chunkier soup.

    Then I mix a heaped tspn cornflour with 1/4 pt milk and stir through then bring back to the boil for a couple more minutes - It brings it all together really well.

    I like parsley in mine too - and we always have grated cheese on the table to heap into the soup just before eating ;) SCRUMMY !

    The whole family seem to like it :cool: I've made it about 6 times now.

    I add skimmed milk powder before blending, instead of using cream or milk. It's not as heavy to carry home from the shops and it has a longer shelf life!

    Bacon, Milk, Cream, Onions in Potato and Leek Soup?!?!?!?!

    I dont like the creamed version of it at all, would say its a seperate soup ie Cream of Leek and Potato!

    Make it with just potatoes and Leeks, veg stock cubes, herbs - basil, and pepper.

    I freeze it in portion sizes, square tesco value small tubs do the trick, and take it out each morning to go to work, pop it in the microwave and nice hot lunch! The fact its frozen makes it easy to transport and no messy flasks to wash!

    Thanks for the tip about putting potatoes in cold water making them mushy - had wondered if it was freezing and reheating doing that!

    All you need is a largish spud and a large leek and a veg stock cube.

    Dice the spud up small and put in a pan
    chop up the leek small again and add to the pan
    Mix up one stock cube you can use veg,chicken or what ever is your fav And add this to the pan.
    Bring it all up to the boil and leave to simmer untill the leek and spuds are cooked.
    Add salt and pepper to tast.
    And ejoy.

    My wife and i love this on a cold day for lunch

    I'm on an extremely tight budget until Friday, so i was thinking about making leek and potato soup today.
    This may seem like a dumb question, do i need anything other than vegetable stock, leeks and potatoes? :confused:
    How can i make it very tasty on the cheap? :rolleyes:
