I've just been shopping, am about to make some leek and potato HM soup, but i only have 2 vegetable stock cubes, is this enough? I'm sure my mum uses about 4ish...
I'm making enough for about 6 bowls..

2 stock cubes should cover over 1 ltr of liquid, shouldn't it? Also don't forget you are already putting some vegetable in. Put the two in and if you need more seasoning (as that is what the vegetable cube is mainly about IMO), put in a bit of salt&pepper.0

If you have some salt you don't even need to put stock cubes at all, just use a pinch of salt, and if you have a couple of carrots and celery sticks to add to the leek and potato soup it makes it even more savoury, no need for extra stock flavouring!
In any case, it is healthier to use less salt and stock cubes provide loads of salt (unless they are the low-salt variety), try without, and see how it goes!

I only use 1 stock cube per litre.
I want my soup to taste of leek and potato - not stock cubes.
But to each their own0 -
I agree with Caterina - what ever it ends up like, just say that is a special recipe you saw on the TV and you were thinking of a bit of change:-))
While you are slowly cooking it, put in whole bay leaf. Just make sure it doesn't brake - then take it out. That will give the soup more natural fragrance and strenght.0 -
Perfect for this cold weather 1 stock cube to a litre, is what i use but i also put in a chopped onion for extra flavour, Think i might make some this week .0
