I wonder why all the previous buyers have paid by cheque/PO? Perhaps I could drop them an email? Is it against Ebay's rules to do this?

Look at the description for all the other listings, still says
"Please pay by cheque or postal order as that is how i prefer to be paid (more fees otherwise and please take this into consideration before bidding) i will send as soon as cheque clears thankyou "

To be honest, I don't know. But 13 or more buyers have paid by cheque / PO according to FB. Still awaiting reply...
I think they are avoiding PP fees since how long does a PP take to set up? 2 months+?
Plus how do they pay sellers? So surely PP has been set up, but trying to 'save' fees and be TSFE?

You wanna use ebay then you accept their terms. Their terms are that you have to accept paypal.
This is a level playing field- otherwise it is unfair.
Ebay reaches a pretty much unbeatable number of buyers, and makes it easy for them to buy which is why, as a seller, we use them.
Paypal provides protection, which is why, as a buyer, I use it.
I wouldn't use independant websites unless I knew from word of mouth that they were safe, and I woudn't ever send them or anyone on ebay a cheque.This is my opinion. Back in the day you paid your listing fees and final fees, and they were happy with that.
Now they want more.
If you sell cheepo stuff ebay make more than you do.
