  • Gluten free pastry is quite straightforward to make. However, it can be a pain to roll out - it is liable to break! The best way I find is to roll out between two sheets of cling film and then peel off the top sheet and use the other to help left into tin.

    Alternatively, mould it in to the tin rather than rolling out. Doesn't look very elegant but once filling is in it loks fine.

    Sorry this isnt being very helpful but its honest in my opinion. I have been GF for 10 years and have probably made pastry half a dozen times in that period. I tried the rolling it out between the sheets of paper and moulding it into the tin but as soon as I picked it up when cooked it just crumbled. I also tried using a little xanthan gum which is a stabiliser but the pastry was very hard. I dont bother now. I tend to stick to cut sticks of fruit and veg and maybe things like pate on GF toast. You could also use the bread to toast and make mini pizza type snacks for her, mozzarella cheese slices in parma ham, crayfish tails, apple rings with the centre stuffed with blue cheese etc

  • You can make patryless quiche. There is a really good thread on here (I will search in a minute) from some of the users who were following atkins/carb free diets, and most of those recipes will be gluten free. I know I saw the pastryless quiche on there. Or you could do spanish tortilla, which is pretty much the same idea.

  • This is for Corned Beef, but you can add anything you fancy!

    CORNED BEEF QUICHE

    Ingredients;
    12oz corned beef
    1 chopped onion
    3 eggs
    8oz v.l.f. cottage cheese
    seasoning to taste

    Method;
    Put corned beef in microwave first to soften and add chopped onion. Put on the base of flan dish and press down firm.
    Beat eggs with cottage cheese and add seasoning then pour over corned beef base.
    Cook for 30 mins or until golden brown at 190 deg c.
    You can have hot or cold, Enjoy!

    Rather than trying to find gluten free alternatives to things like pastry, you would probably find it easiest to simply add a number of things which are naturally gluten free to your usual spread. I am thinking things like chicken pieces, eggs, veg, potatoes etc. Be aware that most sausages are not GF though as they contain varying amounts of rusk.

    How about chicken wings in a honey and grainy mustard marinade, hardboiled quail eggs with 'posh' mayo (ie mayo with bits in), veg crudites & dips, potato salad, mushrooms wrapped in bacon, secured with a toothpick and grilled, cheese squares, olives etc etc.

    Just make sure she knows which things she can eat, perhaps by serving the GF stuff on a different colour plate / serviette / doiley etc.

    Or perhaps simply avoid a traditional buffet and do something like a curry or chilli with rice, or baked potatoes with various DIY toppings spread out for everyone to help themselves. Those are easy!

  • I'm not sure the gluten free thread merges naturally into an ordinary quiche thread?

    I make pastryless quiche exactly the same way as ordinary quiche - we don't have cows milk so I didn't want to use cottage cheese, we just use soya, eggs etc. in the usual way and it bakes fine.
