Aye, freeze the mix and cook from frozen or freeze the cooked yorkies. If Aunt Bessie can do it so can we!0

My gran was a yorkshire lass and she always said yorkie puds were for starters with gravy over and for afters with sugar (or vanilla icecream as she prefered when she was older). The idea was something cheapo to fill you up when meat was scarce.

Having abandoned the idea of having our own home produced duck and chicken for christmas as the animals have gone off their feed and havnt put on enough weight over the past 3 cold and snowy weeks, I have decided to have roast beef for xmas day, now my kids love their proper food, my partners mum was from yorkshire AND we have Margaret my fathers old land army girl coming for Xmas day so my yorkshires must be perfect! (apparently they are nearly as good as his mums so I must be doing something right! ) but can i make them then freeze the batter in the trays ready to be put into the oven? I remember buying ones made like this in little tinfoil trays a few years ago, but can I make my own as he will never let me forget it if I buy them! lolMember 1145 Sealed Pot Challenge No4

I make my own, cook them then freeze them. They just need a few mins in the oven then when they come out of the freezer.
This is a good recipe I use
3 eggs
150g plain flour
big pinch salt
300mg whole milk
whisk the eggs and milk, sieve in the flour and salt and whisk up again till smooth. The secret of a good yorkie is to get the fat really, really hot then they dont stick and rise nicely. I pop mine into a freezer bag to freeze them. Hope this is of some help.:)Do what you love :happyhear0 -
Do they go really crispy though? OH insists they should have a soggy middle like his mums did and if I did that I think they would be crisp all over?Member 1145 Sealed Pot Challenge No4

My mum used to freeze the batter in trays then just shove them in the oven and were fine - she mainly did it for my siblings when they were away at uni save them the effort!!0

Hi Jane,
I deliberately make extra to freeze. When I need them I lift them out of the freezer (no need to defrost) and pop into a hot oven for a couple of minutes while I'm serving up the rest of the meal. They taste just as good as when freshly cooked...soft in the middle and crispy on the outside.
There's an earlier thread with more advice:
Yorkshire Pudding - does it freeze?
I'll add this one to it later to keep the advice together.

i often batch cook loads of yorkies and freeze them down in portions for the family. I find it so handy when cooking a roast and both ovens are being used to just head to freezer for my yorkies. they only take a few min's.
if your oh isn't convinced why not have a trial run before the big day ?0 -
Thanks pink-winged, I couldnt find the other thread silly me, think im going to try freezing the batter in the trays ready for xmas day!Member 1145 Sealed Pot Challenge No4
