    Morning peeps

    Lovely sunny/windy day here, good job when i've a mountain of washing :rolleyes:, 3rd load on now, 2 to go:rolleyes:.

    Not much to report....We've booked our holiday for this year we're going to Pickering for 2weeks all the dogs are coming too, so they can enjoy the area too :T. Looking forward to 2 weeks of delicious food ;)(no i don't think of anything else :o). DD's want to go to Lightwater and Flamingo Land so looking forward to that, DH also wants to scare them out of their wits by taking them to York Dungeons :D. Really looking forward to it could do with a break ;).

    Tea tonight shsteak, DD's were going to have LO chicken fried with rice and peas, but i caught DH munching his way through ti this morning :rolleyes:.

    Anyway gonna drag myself off and do something

    I`m back!
    after a thorough soaking i`ve decided not to earth up the spuds today after all, both houndies have been toweled off and are now asleep and i`ve cleaned the kitchen and scrubbed the salad crisper part of the fridge.
    I have sausages in the remoska and shall make the cake afterwards.

    I`ve just had a call which has knocked my duck off a bit. I`m a witness in court tomorrow and the other person going has just told me that he dosen`t have to go now, he was supposed to be meeting me and we were going together as i don`t really know where it is and i`m bound to get lost. I also have no idea what to expect or anything as this is all new to me, he was going to explain everything on the way so now i`m totally lost and feeling very nervous :o i`m trying not to think about it but it`s creeping back into my mind all the time.

    I`m going to start on the cupboard to take my mind off it.

    Haribo - i had forgotten about your Hospital appointment - sorry :o good luck and i hope that everything is ok.

    .....Tea tonight will be something with mince. I'm fed up with bolognese, lasagne, chilli and shepherds pie so working my way through the More exciting mince recipes thread to see if I can find some inspiration......

    It feels like winter, so it's mince and dumplings for me, with mash and crushed carrots :) followed by leftover Nigella's Caramel Croissant pudding :drool:

    Horrible nasty weather on the Lancashire coast - at least I won't need to water the tomatoes, herbs & salad leaf seedlings today! Will do some ironing tonight while watching "Don't Tell The Bride" and "All The Small Things" on tv. Need to look at the freezer list to see what needs using....have all sorts of things in there like fish stock and ciabatta, but nothing "useful" IYKWIM! It is more an extension to the larder than a repository for left-overs & spare meals :rolleyes:

    Morning All (just about!)

    ((((((hugs))))))) to all who need them

    Wet, cold and miserable here this morning. Finding it hard to get the motivation to do anything. Spent most of the morning on the phone, got a letter from w*rk on saturday to say that from 21st May they will no longer be paying me and I need to claim incapacity benefit. Cant seem to find out how much that will be but I know we are going to struggle big time.

    Really need to get back into the home cooking thing and stop just chucking things in the direction of the oven from the freezer, not only is it not healthy but reckon its about the only place we will be able to cut back on. Going to start my making a list of everything in the kitchen and try to make some sort of plan from there. Have never meal planned before and I know I need to visit Mr A so hoping that by doing this I will be able to keep our spends to a minimum.

    There is probably a lot of other things around the house that I need to do but have decided that I need to do things one at a time so for today this is my plan.

    Hi again,

    I've sent Mum up to DD's room for a sleep as she's absolutely shattered so I'm having a bit of time on here. There isn't much we can do apart from wait and the time passes so slowly when you are doing that. I was going to go and help her clean through her house but she was up at 4.30am so it was all done by 7 :eek: It's also wet & cold so there doesn't seem a lot of point in going shopping either.

    Anyway the point to my ramblings was to see if anyone has an easy, foolproof cheesecake recipe? I found one on the grocery challenge thread but it has Baileys in it & gelatine so I was hoping for a simpler one if possible. DD used to make one at school but she binned all her recipes once she'd done GCSE cookery!!

    Bargainbird - we went to Pickering last year for our holiday and we are going again this year, already paid for, me, dear heart, little bear and darling father. It is a lovely base for all sorts of things, including fish & chips on the sea front at Whitby.

    Sunnygirl - still praying for you. The waiting is the absolute worst.

    Tea tonight - bendy veg and just about to go out of time bacon soup. With home made bread.

    I have a big basket of damp washing, it is/is going to/has been raining (changes every five minutes) so I think I am going to have to put the heating on.

    Penny Pincher - hope you are feeling better.

    Edited to add - Sunnyday - ring the court. They should have included a map with the summons to be a witness, and at the very least they should be able to give clear directions (depending on who answers the phone) and also tell you exactly what will happen. Write down questions, concerns then ring and don't ring off until you feel better. Good luck. Also, I think Janepig who posts on the Arms sometimes is something to do with the Magistrates. Never underestimate the collected wisdom of MSE.

    I made this one and it seemed pretty easy to do.

    American Style Cheesecake

    Base:
    250g Digestive biccies
    125g butter

    Filling:
    225g caster sugar
    3 tbs cornflour
    675g cream cheese (eg philly)
    2 eggs
    1 tsp vanilla essence or zest of half a lemon
    300ml whipping cream

    Crush biccies, melt butter and mix together. Line 9 inch tin and press biccie mix over the base of the tin.
    Mix sugar and cornflour. Add cream cheese and then the eggs and vanilla (or lemon zest). Mix until smooth and slowly whisk in the cream.
    Pour mixture over biccie base and cook in over for one hour on 180 degrees.

    Hi SunnyGirl,

    This is the one that I use:

    Lemon cheesecake

    2 oz butter
    4 oz digestive biscuits
    1 oz brown sugar

    Melt the butter in a pan and add in the crushed biscuits and the sugar and stir well. Press the mix into a 7'' flan dish or round cake tin (I use springform) with the back of a spoon.

    8 oz cream cheese
    150 ml double cream
    190 ml condensed milk
    grated rind and juice of 2 lemons

    Beat the cream cheese until it's soft then mix in the cream and condensed milk. While beating add the lemon juice and rind slowly. and pour it on top of the biscuit base. Chill in the fridge for a couple of hours.

  • Aaaaaargh DS seems to react in a hyper way to medicines and it seems to be happening with his eye drops:eek:. He is skipping all around the house talking at 100 mph and making noises etc. Will have to grin and bear it! will see if I can get him to help make cake for grandma coming.;)
    Work phoned earlier to see why I wasnt there :confused:.....obviously the person in charge of medical unit hadnt passed message on:rolleyes:.
    WS hope you are feeling better today.....I know how hard it is as have been there(in many respects still am:o) and it is a hard journey....a day at a time helps and don`t be too hard on yourself
