Any ideas for using large amounts of marmalade?

    I think Sophie Grigson has a recipe for marmalade icecream...from one of her books but I can't find it on line (sorry) but you could try your local library? it is extremely good!

    If you are using it to glaze carrots, parsnips what do you do? Do you parboil the veg first, then roast? How do you get the marmalade to stick to the veg, does it not just slide off hot veg??

    You don't need to parboil parsnips first, just remove the woody central core and cut them into pieces, turn them in a couple of tablespoons of oil and roast. After about 20 minutes brush on the liquid/jelly from the marmalade as a glaze and then continue cooking.

    I haven't done it myself, but a friend does parboil the pieces, prepared as above, for 5 minutes before turning them in oil. This cuts down on cooking time.

    Our family make a tangy sticky sauce using equal quantities of tomato sauce and marmalade and warm in a microwave or hob to melt. Then cover sausages chicken or other thins you might grill. It's sweet and tangy so works best with a buffet style meals with salads on baked potato.

  • Fold a couple of tablespoons into some whipped egg white and bake and you have lovely (fat-free) orange souffles!!

    Hi all,
    I was inspired to make some jam by this forum and didn't have many jars so i went to Tesco and bought the cheapest things i could find in jars which happened to be Marmalade, now i have a load of de-jarred marmalade and rather than just throw it away I was wondering if you could think of anything I could do with it....
    I knew if anyone could help it would be you guys!!!

    You must be able to make cake with marmalade. And what about putting it on meat - would be yummy as a coating on roast meat.

    And as someone who has also run out of jars, can I say that buying jars with stuff in, rather than mega expensive empty ones from Lakeland, is inspired! Why didn't I think of that? I feel really thick now!

    Actually, I'd have marmite and marmalade on toast, but you'd never shift a jarful like that. :D
    If you lend someone a tenner and never see them again, it was probably worth it.
