Any ideas for using large amounts of marmalade?

Hi folks,
I have just made loads of marmalade and dispite giving lots to friends/family I have more than we could use in 2 years! Husband doesn't eat much of the stuff and our LO only has small amounts of anything at the mo'! Any idea how long marmalade keeps? I have sealed it in sterilised jars.

I haven't been able to find any recipes for things I could do with it...could I make a marmalade cake to freeze? Any other ideas????

    marmalade muffins
    (as suggested on here yday but with jam)

    bit of muffin mix in the cases / pan ,spoonful of marmalade then bit more muffin mix on top and bake as normal

    melted down and used as a glaze on a sponge cake ?
    used as a pouring sauce for pancakes ,spongecake,pudding etc ?
    upside down steamed marmalade pudding ?

    I've got a recipe at home for a Victorian chicken dish involving marmalade and coconut; I'll dig it out and post it tonight.

    And if you have loads go speak to the cook in the local old folks home. Although there might be regulations now, we used to give stuff during harvest festival times.
  • spread it on the bread for bread and butter pudding, which can then be frozen. i've kept hm marmalade for about 12 months without it going off, in airtight jars in a colld dark cupboard.

    :) Marmalade is a preserve it will keep for ages.Sugar is indestructible,the whole point of preserving is to keep food that would otherwise go off for use at a later date.I think we've forgotten this basic idea what with the food police's mania for use by dates and storing everything in the fridge.I've made 15 jars of marmalade this year and it will last us all year.I keep it on a shelf in my garage along with all my chutneys,jams and jellies-chutney made Sept 2004 btw.You say you've sealed it in sterilised jars so it should be fine,probably better the longer you keep it.

    Marmalade Cake.
    7 fluid oz melted margarine
    4 tablespoons marmalade
    6 oz caster or granulated sugar
    3 eggs
    4 tablespoons of milk
    6oz wholewheat flour
    6oz self raising flour
    1/2 a teaspoon bicarb

    Heat oven to 170C, grease a 7 or 8 inch cake tin.

    Beat fat, sugar, eggs,milk and marmalade together. Add flour and bicarb.
    Cook for 1 1/2 hrs. Test with a skewer about ten minutes before end of cooking time. It's done when the skewer come out clean.

    Get roasting bags from Tesco/morrisons etc and place some pork (or chicken - I just prefer pork with marmalade) in the roasting bag and put some marmelade in. If you realy like it then put lots in (3 or 4 good heaped spoons full) and mush it round the meat in the bag. Cook it like any other meat (check the bag for any additional instructions etc). You can either use large pieces of pork OR you can cut them down to really let the flavour go in the meat :)
    Serve with rice and salad :)

    THINGS I USE MARMALADE FOR:

    STICKY CAKE

    Bake a plain sponge cake in a loaf tin. leave to cool and then skewer. Melt some marmalade in the micro and pour over the cake so it soaks in. I do this a couple of times 20 mins apart for a wonderfully sticky and moist cake to slice for school lunches.

    MARMALADE CHICKEN

    Slash some chicken breasts and coat in melted marmalade mixed with a copule of spoons of wholegrain mustard. Grill for 8-10 mins, turn over, re-bast and grill for another 8 mins. Serve with green veggies and potato and parsnip mash. I chuck a good dollop of marmalade into instant gravy to serve as well.

    GOLDEN ORANGE PUDDING

    We love this. Just like a regular golden syrup sponge but with a tablespoon of marmalade added to the syrup to ring the changes.

    sorry i don't have much useful information , but how about jam tarts but made with marmalde instead. yummy.
    or make a trifle and spread marmalde on the sponge before you put the jelly on, giving it more of a orange taste
