If anyone is thinking of making a lower carb cheese sauce (different to the usual cream and cheese) and thinking that coconut flour - to make the roux - would be a good idea, it's not

I quite like the cheese sauce with single cream, cheese and a bit of mustard myself.

Well I weighed and lost nothing, again, and then walked in to arguments for hours so I have spectacularly fallen off the wagon and had chocolate (too much), shortbread and pudding.:D

    How has your day been?

Double cream, mature cheddar and mustard powder is my favourite.

Sheila, hugs to you. Hope your day got better x

I had sausage and egg for tea after visiting family.

Snack will be a nut chocolate bar. I made it by melting a celtic milk chocolate bar then stirred in brazils and hazelnuts.

I made some coconut and flax seed bombs and they were lovely.
    Two tablespoons of coconut oil
    One tablespoon of flax seed
    One teaspoon of stevia
One teaspoon of sugar free coco powder
    One tablespoon of dessicated coconut

Melt the oil then stir in everything else. Put in small lumps on a baking sheet in the fridge until set. So nice and not too high in carbs.

I might buy peppermint flavouring when I go shopping as I think mint ones would taste yummy.

I"m getting on really well with my veggie low carb diet (though its early days yet), but i'm really getting urges to eat cake/biscuits, i have checked out a lot of low carb recipes, but they all seem to use artificial sweeteners.

I recently was quite addicted to diet cola (17p for 2 litres in tesco), but have given it up for about a month now and i'm only drinking water and want to keep artificial sweeteners out of my diet.

Are there any low carb treats that can be made without artificial sweeteners, or would even a moderate amount of sugar make them not suitable?

I use stevia as it is natural and doesn't spike blood sugar.

  • Sinar - I eat 90% chocolate but too much so I'm cutting it out for a bit. At the weekend I made a cheesecake from 90% chocolate and silken tofu with some vanilla and cinnamon and a ground almond base. That was pretty good. Ground almonds mixed or blended with raspberries is pretty good too to kill a sugar craving. I think the choice between sugar and sweeteners is one only you can make. It is better to have a little sugar than to end up having a binge. Unless it makes you crave more carbs. I make cakes and biscuits with just enough sweetener for me to get me through a craving.
Also you can buy pure stevia online which is extracted from plants.

i notice some online bread recipes use wheat protein isolate powder. I don't want to have too much soya and what with replacing beans with soya beans, soya milk, soya flour and soya mince, i would much rather use a wheat protein isolate powder than a soya one. does anyone have any ideas where i can buy it from?

    I've never heard of it.

Do you not mean whey protein?

    If so, £9.99 at H&B.

I use wheat gluten powder but I don't think it is the same thing as you couldn't make a shake out of it which I see mentioned on some websites. You can use that to make 'mock duck' and as an ingredient in bread, cake and biscuits. I know what you mean about too much soya I also try to have nuts, peanuts and other pulses occasionally. Quorn is low carb but I still avoid eggs. I tried hemp protein once but it was too high carbs for me and I didn't really like the taste. bw.
