    Hi all, still lurking on this thread regularly, just not much to post. Been hovering around the same weight mark now for over a week and abit. Think it was due to me giving in to my want of nuts because i really cant control my portions of them. Anyway trying to not each them as much and i am wanting to just eat some bread or something sweet as havent eaten anything sweet in almost a month now. One whole month of low carb :) proud of myself. Just need to keep it up x

    Moussaka:
    Mince of choice, or I used finely chopped chicken
    100g mixed veg, carrot, onion, celery (6 carbs)
    2 large aubergine, about 500g (11 carbs)
    Can tomatoes (16 carbs)
    Veg oxo (0.5 carbs)
    200g quark (6 carbs)
    100ml cream (3 carbs)
    1 egg
    150g mozzarella (3.5g carbs)
    46 total for 8 portions just under 6 each

    Make a ragout with the veg, chicken, tomatoes and some seasoning, add the oxo cube crumbled. Slice and lightly grill aubergine. Layer up in oven proof dish. Make a white sauce using cream with and egg, whisking over a low heat until thickens, season, pour atop your layers and sprinkle with cheese. Bake until golden and bubbling.

    Mousse
    175ml cream 5 carbs
    25g dark choc 85% cocoa or what you can get 5 carbs
    1 tsp cocoa half a carb
    2 or 3 egg whites, whisked to stiff peaks
    Splenda / truvia to taste
    Just over 10 carbs, 4 servings, 2.5c each

    Melt the choc in the cream over low heat and add cocoa. Cool. Whisk into beaten egg whites with sweetener to taste. Chill.

    Oopsies Rolls
    100g soft cheese I used basil and tomato Philly 5 carbs
    3 egg yolks
    3 egg whites
    5carbs for 12, less than half a carb per roll.

    Blend cheese and yolks. Whisk whites to stiff peaks. Combine gently so as not to lose air. I used a Yorkshire pudding tin to make 12 small rolls, but you could spoon onto silicone paper to make 6 big ones.

    morning all

    fitday analysis for yesterday: cals 1,221
    protein 97.6 24% carbs 63.5 14% fat 119.9 62%

    weigh day today , i have lost 5lbs in 5 days by keeping my carbs under 75g :j:j i think i was eating a lot more when i was just guessing , i have also increased my fat consumption i am really pleased.

    focus888 - just hang in there, it does work. I like nuts too but you may need to measure them as it is easy to keep going and eat more than you intend, I know!!

    Had several compliments today about how well I look :p Sort of helps when you are struggling with weight but hope to lose again this week

    L: chicken breast peas in butter
    D: chicken boiled egg salad coleslaw haloumi
    S: coconut oil choccies x 4, mixed nuts 25g tiny edge of birthday cake several cups of tea with milk

    fit day analysis total cals 1334

    fat 100.6 66%
    protein 63.7 19%
    carbs 49.6 14% ( no fibre deducted)

    back to work tomorrow , i dont think i will be able to keep up the fitday stuff when im at work , i will try as its helped me control my carbs

    hope everyone is ok its so quiet on here

    Just a quick hello from me. Still sticking with it, had oopsies with cheese and coleslaw for a nice change today, and bacon, sausage and mushroom for breakfast.

    Did have 1/4 of a hot cross bun though grrr what did I do that for???

    Official weigh in tomorrow with practice nurse, expecting a good result since 2 weeks ago.

    Dinner
    Whole rainbow trout with sundried tomato and basil butter, sliced green beans

    Edwardia - your efforts on the low carb food board are great but where do you find all of the info? Tried Morrisons site but no mention of almonds etc offer.

    Good luck with weigh in bossymoo.

    Breakfast - 1 free range egg fried, 1 rasher bacon

    Lunch - Cucumber with soft cheese, prawns and half avocado

    Dinner - chicken breast wrapped in bacon and cheese, mixed leaves and dsp mayonnaise.

    Extras - coconut oil 1 tbsp, sugar free jelly, 2oz raspberries, Linwoods seed mix, 3 tbsp cream, 1 tsp cocoa, 3 tsp Splenda, 1 tsp peanut butter

    Fitday analysis - 1450 calories, 109.6g fat, 32g carbs, 94.7 protein, 19.4g fibre
    Fat 66%, Protein 27%, Carbs 8%

    Still not sure how to equate carbs to fibre with Fitday. I always seem very low on potassium, manganese and calcium but take supplements to cover the rest. I eat cheese and cream so not sure why calcium is low.

    Any recommendations or criticisms gratefully received.

    I've been off for 12 days and could have made such an impact if i'd tried..my heart just isn't in it tho.

    Sheila, fitday always said my potassium was low too, must be lc foods.
