:rolleyes: I've got a bag of ground almonds lurking in the cupboard.
Any ideas on an easy cake recipe to use them up in?

How about Macaroons?
This is from my 1959 Cook Book
4 Egg Whites
1lb Caster Sugar
8oz Ground Almonds
2-3 drops Almond Essence
Split Almonds for decoration
Rice Paper
Oil baking tray and cover with rice paper, stir sugar and almond together, drop unwhisked egg whites and flavouring into a well in the centre of mix and beat till smooth then either use an egg cup as a mould or use a spoon and put dollops of the mix at intervals onto the rice paper, decorate with a split almond in the top, bake at gas mark 3 - 350f for about 20- 25 minutes. Lift with a pallet knife trim off excess rice paper and eat.
I also have recipes for Almond Cakes, Rout Cakes (Almond Petit Fours) and Almond Slices but they have a lot more ingredients.The quicker you fall behind, the longer you have to catch up...0 -

Nigel Slater has THE most gorgeous chocolate almond cake recipe in his latest book, The Kitchen Diaries. Made it last weekend and it was wonderful! but of course I'm at work so don't have the recipe here and I'm not entirely sure I can remember it...might be worth searching on the internet for chocolate almond cake as I think Sophie Grigson also does one, very similar.

low carb diets use this an awful lot so a search for almond flour recipes on google should provide u with a decent list to choose from
i make microwave cake and bread with mine mainly.

Delia has a fab and very easy recipe for Apple and almond puddling. You can probably find the recipe via delia online( notsure of the link) Very moreish and good for the hips!0
