There are 2 methods. No quantities &, obviously, it refers to a rich full fat milk.
1)
Place milk in shallow pans or bowls & leave overnight until the cream rises to the top.
Scald the milk for about an hour by placing the pan/bowl over a pan of hot water. [kept at a temperature of about 180F or 82C]
When the cream is straw coloured & wrinkled in appearance it is ready.
Cool overnight for about 12 hours.
When cool, skim the cream from the surface using a perforated skimmer or a shallow spoon.
[If left in a fridge the cream will thicken further]
2) Direct scald method
As the method above but using double cream.
After scalding & cooling the whole contents can be used as clotted cream [No skimming necessary]

evening all.....
LIR...i have noticed when woodstoves are tucked in an inglenook they give less room heat. if the stove is out on a hearth so top is in the room it makes a big difference. heat seems to get trapped in "the space" of an Inook... i would love a stove in my front room but to line the chimney would be £1000+ alone. its so bl**dy tall !! and i too like the door open to see real flame. the reason id like one is cos when the generator is off. [2/3rds of the day] i cant run the CH so stove would keep a bit of heat over night for the very cold mornings...if they had an olympic event of "how quick you can get out of bed and dressed" id be heading for GOLD... probably competing with LIR
CHOILLE.... curly willow makes a brilliant abstract hedge...you can grow that easy peasey.. i have a 12ft tree grown from a twig from a bouquet.. LIR had some from me, not sure if it "took"you can twist and turn it to where you want.. ive seen living shelters [bit like half an upright boat over a plank/bench seat] made by twisting and tying.
it was -1 here this morning... i set off for west sussex and it warmed up to 3d and hit 7d before it dropped like a stone tonite..
if i could magic my friends "builders" to any of you that needed GOOD ones...i would !! they have made the most amazing job on her cottage...it looks like they have never been there but in a good way !:D everything they have done , from kitchen slab floor to new kitchen to doors closed off and walls put in/out is done in a way that looks like its been like it for 300yrs !! they work so well with old buildings but new too... and fast !!0 -

Next week builder, ar hitect and structural engineer are coming to look at the holes and supports needed here, then we can finish what was started before Christmas.0 -
A vote in favour of woodburners. Must be twice as efficient as our previous open fire, even though its part set into fire opening. Room, though big, is cosy now, used to be hard to heat before.
Both chooks laying now.

Yes Alfie I think I'll need a fence to tie the living fence to - sort of. Can't do that much without falling over at the mo, but just plotting.
I imported willow onto the croft from down the road & it's doing really well, so I've the means, just need the balance.......
Minus One degrees - that's really cooking Alfie...T Shirt weather, although we have it really mild today. i'm actually considering setting some seeds in trays tommorra, putting them in the house until I can clear beds. Still haven't got my seaweed gathered.
One ewe X Bred Shetland has a horn looping back & I'll need to attend to it before it pushes into her skull - didn't notice the problem until today.0 -

You may even find that the old ironwork for cooking is still up there behind the woodburner's plate
We have various bars, hooks & eyelets once used for smoking & for the iron gubbins (forget the name but they're the things that look like an Allen Scythe which hang & allow the pots to be kept at different heights from the flame) to hang from.0 -
