known in my family as evil death cake:
1 small pot double creamdo not use elmlea, it doesn't work properly. it wont solidify.
1 lemon
1 tin condensed milk
base:
3/4 small pack crushed hobnob style biscuits (ginger nuts also go well)
100g melted butter or marge
first off, smash the crap out of your biscuits. mix with the fat and splodge into a spring form/well lined (with clingfilm) cake tin. put in fridge.
zest your lemon into a bowl. pour on cream and condensed milk. mix well, then add the juice of the lemon bit by bit until it thickens. don't go overboard or it will be overpowering.; but it does need to solidify. oh the joys of chemistry.
pour this goop over the biscuit base and leave until you need it. overnight is best. cover it in the fridge because it does absorb other flavours unfortunately.
serve small amounts with a fruit compote. my family love slightly stewed cherries.
it's called evil death cake as it works out to about 700-800 cal per chunk if you're serving 4. you can cut this down a little by using low fat condensed milk.... then it's about 400-500 cal per slice instead. a little goes a long way, it's relativel cheap to feed a lot of people and they will rave about it.0 -

quite a few listed here in the Grocery challenge recipe list - how about impossible coconut pie, chocolate fudge cake, white choc cheesecake to name but a few
and loads more in the Complete Cookery collection listed under Puddings... don't throw the string away. You always need string!

three ingredients - lemon possett. (set lemon cream). I put it in loads of shot glasses rather than six wine glasses, as it is very rich and too big a portion, and people can have one or more as they like. As well as being cheap this is my favourite pud. To make it posher you could do some shortbread or a biscuit to serve with it.

When i do a cheesecake it's:
cheap digestives
cheap ginger biscuits (makes it a bit more interesting)
1 proper Philadelphia cream cheese
a couple of cheap cream cheeses (no point tripling the cost using all Philly)
cheap butter (it's only to stick the base together)
vanilla essence
double cream
caster sugar
cost - a few quid.
If you want to make it fancy, layer the biscuit and cheesy goodness instead of just having biscuit and cheesy goodness on top0 -
i would be tempted to do basic sponge....dod of stawberry jam and some custard!!!

what about a good old fashioned rice pudding or and apple sponge basically stewed apples and sultanas topped with a basic sponge and serve with custardBlessed are the cracked for they are the ones that let in the light

Not a pudding, but how about serving a basic veg soup with bread to start as well as a pud afterwards? That way people won't be starving by the time you serve the main and won't mind not having loads of meat.Trust me - I'm NOT a doctor!0
