Hi Ianna, Well when I press the mixture all around the tin, I'd say they are about 1/2" thick.
I line the tin with baking parchment which I brush with oil first. Then lift out when cold.
One or two do break in half, (once you've cut them up) but mostly they stay in one piece
I would have thought you could use dried fruit, chopped finely, I'd subsitute the fruit for the same quantity oats.0 -

Granola breakfast cereal - melt 2 tablespoons butter, 1/2 teasp vanilla esscence, 1/4 tsp salt,1/3 cup honey and 1/3 cup peanut butter in a pan and add 3 cups oats and mix. Put on a large baking tray and put in a medium oven for about 25 mins until crispy (have to keep mix it ) - take out of oven, cool, break up and put in an airtight jar.

Stupid question coming up...is cake flour self raising flour?
There's no such thing as a stupid question! I had this problem when living in SA. Cake flour is plain flour, so you have to add baking powder to it - I think (but am not absolutely certain) that it's 1tsp for every 8oz.Seems like oatmeal is the same as porridge oats whizzed up, which is fab!0 -
How about using oats as a savoury crumble topping? Oats, butter, salt, maybe some ground nuts or seeds added in. then use it instead of potato for cottage pie, or on top of your favourite stew.0

Unfortunatly using oats without much fat and sugar seem to be pretty difficult. I'll give you my recipes anyway and you can make up your own mind.
First not porridge, but granola. That crunchie cereal you can get in health food shops. This is an American recipe, hence the 'cup' measurements.
7 cups of dry ingredients including
at least 3 cups of rolled oats
and then choose from
Wheat germ
Wholewheat flour
Sunflower seeds
Sesame seeds
Dry milk solids
Chopped nuts
Dried coconut
Etc. etc
1 cup of liquid, choose from or combine
honey
oil
margarine
milk or cream
peanut butter
Then bake in a greased baking pan/s in a cool oven for 30-60 minutes, stirring often. Do not overbrown.
When cool add, as desired
raisins
chopped dates
dried apples
dried apricots
Etc, etc
Here's a snack option
Honey Nut Balls
Half a cup of honey
Half a cup of peanut butter
1 cup dried milk solids
1 cup rolled oats
Mix well.
Shape into little balls.
Eat as they are.
Sounds odd doesn't it, but I liked them and it's a good one for kids to do.0 -

How about making an oatmeal loaf? There's a recipe for a lovely-sounding rolled oat and apple bread in The Handmade Loaf by Dan Lepard, which uses a sourdough starter, but I'd for a basic bread I'd reckon on replacing about 50g of the flour with oats, preferably that you've soaked in 100ml boiled water for 5 minutes. The advantage of the oats is they give the dough moistness and a rich taste without needing to add fat, and the bread will keep for longer. HTH!2015 comp wins - £370.25

Ooooh granola! Sounds fab. Dd1 is fed up with toast for breakfast so that would go down a treat, esp with yogurt (saves her spilling it on the carpet so much cos it sticks it together, lol!)
I will definitely try that! Thanks! Will let you know re: the loafs and scones, still not had chance to make them yet, unfortunately. Think I feel a baking day coming on tomorrow (even though I tried an old pair of jeans on which I have on now - I said they fit but I CAN'T BREATHE!!!!!!!!!! Definitely bread based muffin top going on here)
