    Ahaaaaaa!! This is something we only did this week in class! OH loves it, often do it for him for dinner, I'm not keen, but this is my method - you need 1 leek, small tub double cream, olive oil, nkob of butter and a couple of ounces of cheese (ie stilton, cheddar, whatever is lurking in the fridge!)

    1. Slice the leeks into thin rounds
    2. Heat a knob of butter and 2 tsp oil in a pan
    3. Add the leeks and cook on a low heat for 6-8 minutes until very soft
    4. Add the double cream
    5. Break up the blue cheese and add. Stir until the cheese has melted
    6. Season with salt and pepper to taste
