Heres my ace spanish Paella recipe. It makes a tasty and filling meal for all and with a bottle of Rioja,it also makes a nice meal for two especially if you cook it for your female partner
I usually use a wok mainly for its usefull capacity and steeper sides.
Ingredients.
Tesco (or similar) spanish Paella rice 500g bag
Some Chorizo
Onion
1 clove of garlic
1 large green or red pepper
some olive oil
some chicken pieces (you can use left over Sunday lunch chicken bits !)
Chicken stock cube
frozen garden peas or similar
frozen or fresh prawns
Some saffron (see the schwartz spice rack)
(1) boil kettle,put some saffron in a mug,put a small amount of boiling water in mug,stir,leave to one side for saffron to dissolve into water.
(1A) if your using fresh chicken,chop into strips and lightly fry in wok until meat is sealed but not brown. If using leftover chicken,skip this bit
(2) Get that wok on ,put a generous spash of olive oil in it ,finely chop a large onion and gently fry it in the wok for around 8 minutes. dont let it burn or go brown.
(3) Crush your clove of garlic,add to onion and stir.
(4) Add your red/green pepper to the mix (you will have deseeded this and cut into strips). Also add the cooked chicken pieces/strips and cook for a further 5 minutes.
(5) make some stock using boiling water and a chicken stock cube
(6)Stir in the paella rice (approx 250g) and mix up thorughly ensuring rice is throughly coated with the mix.
(7) add the saffron mix to add moisture and colour, cook for a further 5 minutes and gradually add the chicken stock whilst stirring. Dont allow the mix to get too hot or stick. The mix should be moist but not overly wet and not too dry that it sticks or burns. Keep the heat on medium/low.
Add the prawns and frozen peas and chopped chorizo to the mix. Its easier to chop chorizo with a big pair of kitchen scissors. Use thinnish slices as its quite dense.
Allow to simmer for around 15/20 mins ensuring that you keep the heat low,check it regularly and make sure it doesnt stick/burn. The paella rice will gradually absorb the stock and become sticky. If necessary add a little extra stock if the mix becomes too dry. Simmer for at least 15/20 mins to ensure the rice grains soften and are not too firm.
Take a nibble to test for consistency/taste.
250g of paella rice should be enough to feed three generous portions.
It makes a very filling and healthy meal.
Practice makes perfect !
You can add others bits and pieces to suit eg shellfish if you have any etc..
Uncork the rioja...enjoy.
Most packs of Paella rice have a recipe on the pack if you get stuck.0 -

What exactly do they provide? Is it just the spices? No sauce? The website gives the impression that it is just the spices and you provide everything else to make up the recipe.0 -
