Chicken breasts wrapped in pancetta roasted on a bed of thinly sliced leeks and butternut squash. Tried it last week for the first time and will definitely be doing it again soon. (And I didn't even think I liked butternut squash!)Very, very easy recipe, stick it in the oven and it looks after itself.0

friday - chicken and mushroom tandoori masala with rice
saturday - river cobbler (fish) with flavoured butters, baby potatoes, asparagus amd fine beans
sunday - lamb henry (minty), shredded layered veg and root mash, minty gravy
monday - bolognese, garlic bloomer
tuesday - chicken roast
wednesday - something with roast chicken ?
thursday - pork chops with ?

Smoked mackerel and brown rice
Cook up a load of brown rice, just before it has finished cooking throw in frozen peas, sweetcorn and diced carrot.
While this is happening fry some onion and some diced red pepper. Add a packet of smoked mackerel fillets flaked.
Drain rice and stir into mackerel mixture.

Thought I'd get the meal plan down on here for next week to keep myself organised.
Monday... Roast pork, roasties, carrot, peas, HG cabbage and yorkshires. (Have roasted the pork this morning, prepped the veg and made the yorkies so it is just a reheat tea tommorrow as I have a busy day.)
Tuesday....Toad in the hole, mash, brocolli and cauliflower gratin.
Wednesday.... Mince and tatties, carrots and peas (currently in the SC and will be frozen later)
Thursday... Tuna pasta bake with salad and garlic bread.
Friday.... Smoked salmon fishcakes with salad and HM crusty bread. (to use up the leftover Christmas salmon in the freezer as we were given 3 full sides):eek:
Saturday.... Moules Frites as requested by DDs (will get them fresh from the pier on Saturday morning
Sunday.... Roast Chicken, boulangere potatoes, green beans, carrot and parsnip mash and yorkies.
Breakfast are porridge or toast and HM jam.
Lunches for us all are HM lentil soup, Seafood chowder or HM beef stew in our food flask (all currently lurking in the freezer.)
All of the above to be supplemented with HM yoghurt and lots of fruit. :cool:
The only shopping I need to do for the above is fruit, milk, brocolli, spuds, chicken, sausages and mussels.
ETA baked shortbread hearts and muffins yesterday and made loads of toffee so have plenty of goodies for the munchie box as well. :drool:0 -
Hello all - Just had a scout in cupboards and freezer and this week will be having -
Sunday - Home made Pizzas
Monday - pork casserole (in freezer)
Tuesday - Mushroom stroginoff (in freezer)
Wed - Spag bol (in freezer)
Thurs - Quorn stirfry
Friday - Baked butter nut squash
Sat - out in Leeds
Sunday - at a christening .... hoping for a buffet!
Breakfasts - porridge and fruit at work
Lunches - got A pan of chicken broth on, hoping to get some ham and pea soup done later too.0 -
Boodle how do you do your cheesey hot pot? Is it like a gratin type of thing?

Funny week this week as it is half term;)
My mum is coming from Edinburgh Tues till Sat to help with DS as he doesnt cope well when his routine goes out of the window:rolleyes: usually has meltdowns left right and centre. OH at work a lot this week so mum retiring in Oct has come in handy:rotfl:
Sun Beef braised in beer, pots, brocolli, chantenay carrots and (yorkshires at DS request)
Mon Spag Carbonara
Tues Fish and chips as am working till 6 and mum arriving etc
Weds Potato, onion and bacon hotpot, carrots and brocolli
Thurs Sausages in cider sauce, mash, spring greens
Fri S/C chilli, rice, HM garlic bread, salad
Sat Egg, chips and beans
Have made Lemon loaf cake, Twinks and choc chip cookies for quick snacks( may have to do more cookies today as DS has eaten his way through a few:cool: )0 -

Hi thereI layer up thinly sliced potatoes, each layer topped with sliced onion, grated carrot and grated cheese. I pour some milk (made up from dried) over the top with a pinch of white pepper in it and sometimes mustard - not sure of quantities, i'm sorry, as i do it by eye, but probably about 1/2 - 3/4 pint of milk. Then I bake it in a 180C oven for about an hour. Very yum with baked beans - haven't had it in a while so really looking forward to it!
