    Can't help you much with the meat meals Mar but all the above will help for when you feel low with your ME too. Why not smile at the local butcher and ask him for ideas?

    Toad in the Hole is yummy and cheap - esp if you put onion wedges in with the sausages.

    Baked potatoes with various fillings make for a good lunch

    Your home made bread if stale could be make into bread and butter puddings or panzanella (a lovely italian salad - just bread toasted into large cubes with tomatoes, onion, basil and a vinegarette x

    Dead easy suet pudding recipe for the microwave:

    3 tbsp golden syrup
    100 g self-raising flour
    50 g shredded suet
    50 g caster sugar
    1 egg
    2 tbsp water
    4 tbsp milk
    2 drops vanilla essence

    Pour the golden syrup in the bottom of a lightly greased m/wave proof (glass, ceramic or plastic ) 900 ml basin.
    Mix the flour, suet and sugar together to a smooth batter then add the egg, water, milk and vanilla essence. Make sure no lumps....
    Spoon the mixture on to the syrup in the basin.
    Set the microwave at maximum (full). Cover the basin with m/wave suitable cling film and cook for 2 minutes.
    Remove the cling film and turn the basin round.
    Cook for a further 2 minutes.

    Leave the pudding to stand for 2 minutes before turning out and serving.

    Vanilla essence isn't essential and it works just as well with jam.

    I always keep stale bread but end up throwing it out cos I dono what to do with it!
    No weird pulses like chickpeas in this house Cattie - the only ones allowed in here are red lentils who know their place - in soup! :D
    Yes we like liver and hubby has low iron so it would do him the world of good and I keep forgetting about it, ty for that.
    No microwave maman!
    And no chip pan either - and I so miss chips & egg!

    I'm making toad in the hole for tea, onion wedges is a great idea, I've a glut of onions at the moment that need using up.

    So pleased you posted this Mar because otherwise I would never have known about Mrs L's meatloaf :)

    You know I'm a fan of steamed pudding in the slow cooker... enjoy :D

  • MAR - you can freeze the breadcrumbs and use them when you need them, I even blitz crusts I've cut off if I've got them, breadcrumbs is breadcrumbs, and crusts work just as well as the doughy bit. Very thrifty eh? Mind you it doesn't half upset the birdies in the garden!!!!! Cheers Lyn xxx.
