All diabetics process food differently so what is OK for one person, just won't be for another, and all you can do is try smaller amounts, and keep testing, and avoid the foods if they are causing too much of a spike, or check medication/treatment if/where appropriate.
I think you've had some good suggestions so I do apologise if I repeat stuff.
Alternatives to spuds: pretty much any other root veg can be tried in place.
Lentils are easy to cook, but again depends what kind of food you like.
Pasta, noodles, bread, pastry, dumplings cobbler etc are all likely to cause the same problem as they are all made from flour.
Gram flour (is made from chickpeas) would be a good alternative BUT if you're not a cook & don't like foreign/exotic food that's not much help to you!
Pulse & beans are good though - something like sausage and bean stew is easy, and tasty. You can even mash beans like butter beans in place of spuds (though I must admit butter beans are about the only beans I hate)!
I love lamb, but like you find it too expensive to buy very often. Some supermarkets do sell frozen lamb & mutton mince which is cheaper and very tasty though.
Frozen pork loin steaks are cheap and you can cook them in loads of different ways.A waist is a terrible thing to mind.0 -

how about scotch eggs, ham quiche, HM sausage rolls, HM beef olives, meat loaf made with turkey mince and minced bacon, still giving him some meat but in a different way!
my hubby wont eat anthing 'foreign' either, but at last have got him onto lasagne and spag bol!Every days a School day!0 -

Another thing to try, instead of spuds, is celeriac, its delicious and nice for a change.
Aren't new potatoes lowest GI? Mardatha what diabetic cookery books do you have ? It does seem restrictive not to be able to eat WM pasta or rice, albeit at smaller quantities with more protein to balance the GL.0 -

Would gluten free pasta (made from corn) affect his blood sugar levels?
How about a bean stew, beans of choice - I use butter beans - cooked with carrots, neeps,potato, onions and stock. Thicken if necessary with cornflour. You can add garlic, herbs, tomato puree anything really.First they ignore you, then they laugh at you, then they fight you, then you win.0 -

I've seen some recipes where you can make a lasagna type dish, but with pancakes instead of pasta sheets - maybe another member would have a recipe for something like that (sorry I don't have one myself).A waist is a terrible thing to mind.0

You get wheat free pasta made from rice. Corn pasta is nicer than the rice one though, as its seems to have more of the same texture as wheat pasta.
I'm supposed to eat wheat free products, thats why i tend to eat bread made from plain flour. I seem to be able to eat it without having as many stomach cramps as usual. Saying that really i should be tested for being a coeliac, but just can't bear the thought of having no bread!
Oh and pacakes, i do this all the time, i make pancakes, let them cool. Place filling in the pancakes and roll them up. Place in a tray and place a cheese sauce over the, I did this with cannaloni and it was soo nice.0
