Cooked the Cheeseburger Impossible Pie last night and we all liked it so definitely recommend giving it a try, a bit different to anything that I'd made before and so easy to make which is good when the kids are off for Half Term as I didn't have to spend long in the Kitchen.;)"WASTE NOT, WANT NOT!"GC for OH, myself, DD18 & DD16 includes Toiletries, cleaning stuff & Food.

The dessert Impossible Pudding sounds very like the Lemon Surprise Pudding which I used to make "when I were but a lass"
It ends up as a very light sponge with lemon sauce/custard underneath. I wonder if I can find the recipe again?

Hi DdraigGoch - I use Delia Smith's Lemon Surprise Pudding Recipe:-
2oz Butter
4oz Caster Sugar
Rind and Juice of 2 Lemons
2 eggs, seperated
2oz Self Raising Flour
5floz Milk
Beat the butter, sugar and lemon rind together until soft then beat in the egg yolks, fold in the flour, alternately with the milk and lemon juice. Finally whisk the egg whites and then fold them in, it will look curdled but that's normal. Pour the mixture into a greased 1.5pt baking dish and cook for 40-45 mins at 180 degrees.

My mum made the impossile pie a while ago - when she first told me about it - i thought she had been "had" - couldn't understand how it would work! But it did and very nice it was too!0
