    How fab are your mates?? Absolutely marvellous - you deserve them and I'm sure would do the same for them in another situation. Enjoy it, you deserve it! :)

    1 bottle of vino :A, (OPTIONAL) :rolleyes:
    (a white dessert vino :j(is best) or rose) :rolleyes:

    3/4 of a pack of digestives
    80gr butter

    50grms castor sugar
    1 1/2 small tubs of original philly cheese
    140ml double cream, lightly whipped
    1 lime
    2-3 table spoons of elderflower cordial ( homemade if possible):j


    1. Open bottle of vino and pour a small glass , sip to check its chilled to correct temperature.:rolleyes:

    1a. place biscuits into plastic bag and bash with rolling pin , or chuck in a food processor and blitz em.

    2a. melt butter and add to food processor, or tip biscuits bits into a bowl and add melted butter and mix

    3. sip vino to check vino is still ok :rolleyes:

    3a. press the biscuit mix into an 8" round tin (with a lift out base, or a spring loaded side so you can get it out later)

    4. repeat step 3 :rolleyes:

    4a. wash the lime and zest half of it into a bowl or food processor, add the philly cheese , castor sugar and mix well,
    (if using a food processor use this time to relax and check vino hasnt evaporated , if it has top up with chilled vino from fridge,......... if using brute force mix well and then reward yourself with a sip of vino once you have completed the mixing :rolleyes:

    5a.then slowly add the elderflower cordial and mix in then fold in lightly whipped double cream to form a thick (ish) paste.

    6a. spoon mixture over biscuit base, ssssshake and bash (lighthly) on work top gently to get rid of air bubbles and even out mixture,

    7a. chuck in fridge for 3-4 hours

    8. pour a small glass of vino or two during this time to check vino temp is correct and that your fridge is still working ok.:rolleyes:

    9a , get cheesecake out of fridge , dip a normal knife into hot water and run around the side of the cheesecake to loosen it from the side of the tin , (you may have to push down into the biscuit if using a push out base tin ), lift out on to large plate and portion ,
    garnish with elderflowers if you have em or lime slices. :A

    you could also serve with a light Lemon thyme and blueberry & strawberry coulis on the side, :D

    For the Blueberry and lemon thyme coulis (this makes lots so you may need to reduce the amounts, it will keep in the fridge for a week or so)
    A couple of large strawberries
    1 punnet blueberries
    75g sugar
    75ml water
    10 sprigs lemon thyme
    Picked lemon thyme leaves and flowers
    Place ½ punnet of blueberries and the strawberries in a saucepan with the sugar and water.
    Bring to the boil and simmer for two minutes, remove from the heat and blitz to a fine puree in an upright bar blender, pass through a chinoise, bring back to the boil and add the remaining packet of
    blueberries and lemon thyme, remove from the heat, allow to infuse for 1 hour, refrigerate.
    Remove the thyme before serving.


    SOME Notes on making the cheesecake :

    You could add a little of the sugar to the biscuit base when making it , but I see no point personally.

    you could omit the lime zest completly to get a purer elderflower taste,

    If using bottled elderflower cordial the taste will be stronger so you will probably need less, trial & error will tell.

    If using the coulis DONT pour it over the cheesecake as the coulis will overpower the elderflower before youve tasted it just add a few drops to the plate to allow your (victims) guests to mix it with each spoon full if they wish.

    Coulis notes:
    You dont have to have 10 sprigs of lemon thyme, although the flavour will be stronger if you do
    You can always use normal thyme although the flavour will differ its still okay though.

    hope your assessment goes well today. And even if they knock you back, i think you would have grounds for an appeal due to supervisor, and if you makes lots of waves about it, they may well keep you on to preserve the universities reputation.... but who knows
