    Ooooh have read all the pages to this thread, and have just got to have a go now! :D

    I remember my mum making plate pies when I was a child, don't think she ever measured any of the ingredients, she just guessed but they were always lovely! Shame she is no long with us to tell me how to make it, but I will be having a go tonight making the cheese and onion pie! :D

    Right, I've found a couple of large victoria sandwich type cake tins in the cupboard, just the right size for a pie, but just have a couple of questions before I start, first one is do you grease the tin? Second one is, what temp for the oven and for how long? Thanks! :D

    I have just changed my Ocado order for tomorrow, to include two blocks of Trexx.:D
    I feel a corned beef, potato and cheese pie and a curried mince and potato pie, coming on.

    ;) Felines are my favourite ;)
  • A woman on my team at work made a pie for us today - it was corned beef, potato, onion and peas, and she added a little bit of ketchup and brown sauce to the corned beef to give it a bit of a kick and it was absolutely GORGEOUS!! I had 2 pieces ha ha :-)

    I used to make mini corned beef pies years ago, used sc pastry, in bun tins, filled with corned beef hash then cut circles of pastry to make lids.
    Little hole in top to let steam out, baked @15 mins, prob about 200c.

    Not made them for years but basically made pastry, chopped onion, chopped potato in tiny pieces, sauteed in little oil, till softened a bit and onions translucent, added maybe 1/4 tsp curry powder, fried off, added cubed corned beef from tin, cooked for few mins then cooled and used to fill pastry.

    Could use for plate pie, adding any other bits - beans, little tomato sauce/puree etc if like. The curry powder sounds unlikely, but was lovely. The potatoes stopped it being dry and the little ones made good lunch snacks or picnic snacks. :)

    PS Just looked back and saw some early posts re corned beef pies - sorry! Tho again, curry powder. Also was gonna suggest sausage and apple - mmmmh - but Steerpike beat me to it! :D

    How many people brown mince in a pan?

    When I was growing up my mother always boiled mince. It came out grey but tastes lovely.

    A few years ago my son's new wife was cooking mince. She put it in a pan, without water and we tried to get her to put water in too. She insisted that that was the way her mother did it, and that was the way she was going to do it.

    Ooooh ... I ALWAYS brown mince, it seals in flavour and drains out the fat! My friend doesn't brown it, she boils hers, like you do, and it's always grey and anaemic looking.
    I always add worcester(shire)? sauce, tomato puree, garlic, etc etc to mione anyway, so it would have colour & flavour even if didn't use browning, but hers is grey with added oxo ... _pale_ :D

    If lining with pastry then yes, grease the tins. But I'm assuming that for a plate pie I'd make it on a large plate like a dinner plate. I'd use a tin (or deep ovenproof dish) if I was putting a wettish filling (like steak or chicken in gravy/sauce) and just covering with a pastry lid.

    I love plate pies, especially corned beef, but these days I try to avoid lots of pastry. Good and filling for a family though.
