I've eaten loads honestly, I'm sure it just the removal of junk food and cheese coupled with the fact that I'm pretty fat anyway (BMI 35).
The average day has been:
slice seeded toast with nut butter and mashed banana, glass fruit juice
mashed avocado or houmous on crackers/toast with cherry tomatoes, handful dried fruit & nuts
chickpea&spinach curry/veggie sushi/bean burger and wedges, soy yoghurt
snacks of fruit (3 bits a day) and a few squares of dark choc or some twiglets.
So yeah, been eating loads really. just not eating pizza/cheese toasties/cheese & crackers/ loads of chocolate like I used to. Feel so much healthier! And my IBS has all but disappeared.0 -
Snap! Except our nut roast was one from another meal - one usually does us for two meals.
As there's only two of us, one nut loaf lasts 4 meals.
Have you tried a slice in a toasted sandwich?
Almost as good as left over curry!!!
Here's a recipe:
OWEI's Nut Loaf
(Serves 8)
Prep time: 70 minsIngredients:
1 Lge Onion, finely chopped
1 Med Carrots, grated
1 Med Parsnips, grated
10 Med mushrooms
3 Cloves of garlic
250 g Mixed nuts, chopped
200 g Oats
275 ml Vegetable stock
2 Tsp Yeast Extract
3 Tsp Soy sauce
2 Tsp Mixed herbs
2 Tsp Wholegrain mustard
100 g Sesame Seeds
100 g Sunflower seeds
Worcestershire Sauce
Olive oil
Black Pepper
Method:
1.Fry onion until soft, then add the garlic and cook for a couple more minutes.
2.Add the remaining ingredients (except mushroom), mix thoroughly and put half the mixture into a greased loaf tin, then a layer of mushrooms then remaining mixture.
3.Cover in foil and bake at 180c for about half an hour.
4.Uncover and bake for a few minutes until golden.0 -

I see myself as a kind of vegan mentor. I will check out the shops soon and see if i can find any more bargains to list for you. I haven't checked for a while for toiletries as i am so stocked up with previous bargains!

Murrell its especially helpful for someone like me, I have a disability and cant walk around the shops easily due to constant pain and weakness, its so much easier if I know exactly where to go and what to pick up, saves me alot of time and pain.
I do now have a scooter though so thanks to you I have a list of shops and products to buy on my next trip out. :TReal stupidity beats artificial intelligence every time.

In sainsburys today notices quiet a few of their basics items were vegan including instant mash (yuk- but someone else might love it) and instant chicken flavour noodels (I love these).
I havn't lost any weight since becomeing vegan (again) in september - think I am too good at finding vegan treats!0 -
Thanks for the nutroast recipe OWEI. I shall haveto ahve another atempt at nutroast. I seem to have a curse where nutroasts are concerned - they come out too runny, too thin, nuts too chunky or fine, etc etc. But I shall persevere and one day I shall conquer the nutroast!
Aside from that I was having wondering what everyone cooks/eats here when they're feeling flumpsome (tired, stressed, fedup) and can't be bothered to construct even something as basic as nutroast. Here are my terrible 10 minutes dinners...
I tend to keep some readymade nut-cutlets in the freezer and have one of those with roast potato (and any other useful lookin vegetable) and some peas/kale/spinach.
Also, another idea came to me last night as I had some leftover spicy mince (TVP). I stuck this in a pan with a tin of tomatoes, a tin of butter beans a red pepper and a couple of sliced mushrooms. Heated it for 10 minutes or so and voila instant chilli! Devoured with half a packet of value tortilla chips. I think I'll have to make some spicy mince up to keep ready in the future as was tres yummy. Does anyone know if you can freeze TVP after its been cooked and then heat it again? I assume so since I heated it from chilled.
If i really can't cook anything then I'm afraid I have been known to resort to four slices of toast and marmite for dinner :eek: (but at least I'll be getting my vitamin B12:rotfl:)
Anyone got any super-easy culinary wonders for the just got home from hell-at-work and need to eat conundrum?0 -
It sounds weird and it is a bit bland but I love it- I get a tin of chickpeas and put them in a frying pan with sesame oil (or olive) cook until browned, then add soy sauce, balsamic vinegar and any other spices or quick prep veg like mange tout etc. It comes out as a sort of spicy morrocan, chick pea stir fry thing! I have it with rice or noodles. I also do quick stir fries, pasta and vegan pesto (free from aisle) or the faithful marmite on toast.0
