The problem Im having is I have an aunt who has been vegan for years, but she actually hasnt got much interest in food at all and I would say possibly has an eating disorder, she is often ill and OH keeps saying Im going to get just like her and have constant colds and get really skinny. But she would never eat half of the food I do now, she seems to live on plain baked spuds most of the time. My mum is also worried I'll turn out like her sister but theres no chance of that, I love my food too much ;)

  • M & S cross hot buns that are 3% fat with the bar code/UPC of 190961 should be vegan. Not sure when this info was as the info does not say. However the bar codes/UPC should be change regularly so you should be okay if it does say that. Hope that helps.

I was just coming back on here to say that Oh came back from visiting his Nan with a pack of hot cross buns from M&S, there is a list of ingredients and it doesnt mention milk or eggs :D the list is wheatflour.sultanas.currants.sugar. orange and lemon peel.Dried wheat gluten.Invert sugar syrup.Yeast.Emulsifier.E471,E472.Salt.Potato dextrin.vegetable oil.spices.natural flavouring.flour treatment agent.Ascorbic acid.
Im not sure on the E numbers as I remember somewhere someone posted a list of ones to avoid ( or I might have read it on a vegan site) So what do you think ?

They are not listed in the current animal free shopper book. And as already mentioned both E numbers could be animal derived. The M & S online list is currently being updated, probably because they used to have meat products in there online list!!

I have brought hot cross buns from there before, but ingredients can change from year to year, and I havent checked whats available this year yet.

Not much help when you have them and fancy eating them thought!!
    Thanks

has anyone tried coconut kefir cheese?

How do you make coconut Kefir?

Take your case of young coconuts, punch holes in the end where the eyes are pour out all the coconut water into clean glass jars. To one pint of liquid (about 4 young coconuts) add a packet of kefir starter culture. Let this sit about 24-48 hours.
You will know your kefir is ready when the color changes to a milky white and usually there is a bit of bubbling or foam on the top. This means the sugar has all been removed. When you drink it will taste tangy and tart.
You can use about 1/4 cup of kefir from the first batch to "transfer" friendly bacteria to your next batch of kefir. You man do this up to seven times with one package of starter. When the weather becomes cold outside warm the liquid to about 90 degrees before adding the starter. Then place the glass jar somewhere warmer so the temperature is steady at around 70 degrees.
Allow room for expansion as the coconut water ferments and becomes coconut kefir. Cover and let set at room temperature for a day or two. The cooler it is in your home, the longer it will take to ferment. The water will become like a drinkable yogurt. When this happens place it in the refrigerator. It will keep for several weeks. You may add vanilla, stevia, or any flavoring and sweetening of your choice.
A common serving size is 1/2 Cup of Coconut Kefir and it is fine to drink kefir with a meal. You can add ginger, stevia. fresh lemon, and/ or lime juice, etc. if desired. A half of a cup at bed time is also beneficial.
    Make Coconut Cheese!!

To make coconut cheese open up the young coconuts from step one above and scoop out the soft flesh. Blend this flesh into a pudding and add the remaining activated culture from that pint jar (see above) or from your coconut kefir culture. Mix thoroughly and let set at room temperature. This will make a cheese like substance somewhat like cream cheese that you can use in dressings, or as a spread. It is dairy free and delicious. It too will store well in the refrigerator.

  • Hi,
Don't know if this has already been mentioned, but you can stop soya milk from curdling in coffee by adding a tiny pinch of bibarbonate of soda. It curdles because the drink is too acidic, not because it's too hot, and the bicarb neutralises it just enough. You can't taste it at all, and though it seems weird to add something to a drink, it's only something found in conventional baking powder, and not of animal origin.

BTW, I buy Tesco value soya milk - it's organic, and cheaper than their branded organic soya milk. I have issues with rainforest being cut down to supply the increasing world demand for soya products, so try to limit myself to a couple of cups of tea a day and drink coffee black - a compromise of sorts. ;)

I've just been looking at my ecological footprint (see link in this thread http://forums.moneysavingexpert.com/showthread.html?p=18802187#post18802187) and the figures for the footprint for vegans compared with other diets are pretty amazing! Even better if you buy your food from farm shops & markets!

... and if you eat organic/grow your own... even better!

    Hiah,

Just been to Sainsburys and had a look to see if any of there hot cross buns were vegan and yes, two of them are and clearly labeled on the front too. I didn't buy any to try mind as i knew i was making a bread pudding for today and tomorrow. Only looked so I could post on here. So glad they have changed there recipe, last year they were glazed with shellac, so not vegan.

Hope this help someone. Will have to have a go at baking some one day.

Good luck in your blog if you decide to do one. I was thinking about doing one also, along the line of what vegans eat and posting recipe i try everyweek. At the moment though we are using things up ready to move, so won't be trying as many new recipes. So may have a go later in the year. Although there is a lot of vegan blogs, not so many English ones.
