Going vegan......old style?!

    Well it sounds like you have figured out your weakness. Not easy if you are feeling under the weather. When you are feeling better perhaps you could make a extra portion or two and freeze meals, when making your dinner. If quiche is a weakness, I am sure someone will come along with a vegan recipe or you could try vegweb. Or perhaps make weezls onion tart tatin or red pepper tart. Its always a good idea to have some convenience foods in I think for times like this too, you may not feel like a homemade shepperds pie and want burger and chips. I always have lots of frozen vegetables and some pasta and pasta sauce in, so there is always a quick meal if you know you don't always get time to cook. Doesn't matter if its homemade or shop bought, just helps to be prepared. Always here to help.

    That looks delicious. I've printed it off, but I've run out of nutritional yeast, so I'll have to wait until I can make it. The lentil salad she made to go with it looks yummy too so I printed that off :)

    I wonder if the tofu used in that is firm or silken tofu as it doesn't state which one. Could make a big difference on the final dish if you use the wrong kind.
    I am a vegan woman. My OH is a lovely omni guy :D

    Hi everyone :) I have been holding off posting until I caught up with this thread, but I have promising myself that for the past few months and still haven't found time to manage it :( So I apologise for jumping straight in before reading it all, but if I put it off any longer I don't think I would get around to posting at all!

    Our family decided to go vegan, actually prompted by the beginnings of this thread but I just couldn't keep up with it! So thanks for starting it Twinkle Star :T I wanted to post thanks to everyone who has posted tips, ideas and encouragement in advance and hopefully I will get through them all at some point!

  • Yay Boodle. Well done for the transition. I'm really glad the thread helped - I know having other people going through similar stuff really helped me.

    I'm still vegan and loving it but trying to come up with lots of super frugal recipes as my living costs have jumped rather a lot (not due to food but other stuff). Am using weezl's nice recipe site and discovering all the old recipes on this thread again. Glad they're all here for reference purposes! :)

    Anyway, good luck and keeping jumping in!

    Ha, I'm not even that fond of quiche - I was seduced by the special offers and the thoughts of "instant" food. That's my downfall, just grabbing things after I've run out of steam. I also ate meat at my sister's house - I think perhaps I was a bit fed up with dealing with all the questions and comments about my attempts to eat vegan. She didn't mean any unkindness, the opposite I imagine. But I felt a bit worn out with it and I didn't want to put her out. Thanks again for the advice and support Sandra. Onwards and upwards! So far so good today - can't go wrong with a bowl of porridge!

  • I used firm tofu in the recipe. I drained the water off, then mashed it. Don't worry about getting too much of the water out of the tofu, as it actually helps to mash it to have a bit of water in the tofu. It evapourates off when you add it to the courgette mixture anyway.

    Thanks Nuala! :) My DH mostly eats vegan but does slip up now and again as cheese is his weakness and has had the odd bit of meat when eating out. The youngest one knows no different as she was vegan from being weaned (she is over a year old now.) DD sometimes gets a bit confused and won't touch veggie burgers at all as she won't believe that there is no meat in them and she hasn't like cheese for a long time so not much trouble there!

    The only problem we had was finding something to put in tea. I could bear soy milk but DH couldn't at all. Rice milk wasn't fab for us. But we like the new So Good oat milk - doesn't curdle, DH is more than happy to have it on tea or cereal (for a while it looked like he was not going to give up his dairy for that), baby likes it and DD will have it on cereal or as a smoothie (though not as a drink for some reason.)

    Eating out, we find Weatherspoons has a couple of choices. Mc Donalds has no veg burger, but Burger King's kids bean burger is fine (unless one of the e-numbers is bad, I haven't got those sussed yet :( ) although the adult one has cheese on.

    Sorry am rambling - beyond 8:30pm my brain is mush I'm afraid!

    I think cheese is by far the hardest thing for me - but veganism aside, I ate far too much of it so cutting it is no bad thing (if I ever succeed!). I don't really mind the soya milk in tea, it didn't curdle and I think I'd get used to the taste in time. I must try the oat one for cereal, really don't fancy the soy for that. Also, I found switching to rooibos tea helped cos it doesn't need milk and helped me break the cows milk habit.

    Thanks for the Burger King info - I used to eat there with my sister sometimes so I'll know what to get if I'm stuck. But really I want to steer clear of fast food if I possibly can.
