    As you may or may not know Weezl has been putting together a subsistance plan on eating for 80p a day. The first month which was for the meat eaters, although was about 50% vegan has just run with test families and was very sucessful. She and the group are now working on the vegan plan. She is looking for people to test the recipes and give feedback. Then eventually this vegan plan with run for a month with test families. She is also in the process of putting a fab website together which shows the first months plan and the vegan recipes to test.

    If any of you wish to help and test the vegan recipes, please visit her website and try them, the ones to test are at the bottom of this page.

    Thanks for that Sandra. I'm going to check that tomorrow as it's getting a bit late for me now. My DH, DD1 and DS are all out on camping trips this weekend (scouts for DH and DS and DofE for DD1) so it should be relatively quiet for me, and I'll actually be able to get on to the computer!

    Just bumping this up to the top so I can find it again. Am looking particularly for ideas for camping??? I'm planning my usuals of potato/cauli and chickpea curry, butterbean and mushroom pasta a'nd falafel but would love some new ideas. It's a while since i've needed a vegan meal every day for a week!

    Hi folks,

    I'm trying to eat vegan ... it's not always easy though!

    One thing I'm looking for help with is getting enough calcium in my diet. And iron too now that I think of it.

    Fortified products don't seem to be an option - I buy organic if possible and it seems the that the organic dairy-free milks are not fortified. Plus I'm not overly fond of them so I don't use them much anyway.

    So one thing I want to do is to try eat more leafy greens - these will mainly be seasonal and organic from the farmer's market.

    One difficulty is that I live alone so it can be difficult to use up a full head of something before it goes off. Any suggestions to help with this?

    I really like what Weezl & Co are doing with the meal plans on a budget. I guess I need a way to adapt that for one person. I can't abide waste but I'd rather avoid eating the same thing 4 days running!

    Good luck with eating vegan. Yes, I assume the calcium used isn't classed as organic, even though its probably just ground up rock or something. I guess you will just have to stick to organic non fortified foods such as almonds and add these foods where you can. The bonus is you probably will be using organic ground flax seeds for your omegas and the bonus is they are also high in calcium.

    With any iron rich foods you need to have a vitamin C rich food to absorb the iron. So if for example you have organic oats/muesli for breakfast, you could have organic orange juice with it.

    I suggest you read plant based nutrition by Stephen Walsh. Also see the vegan society site for more info on all nutrients and a downloadable booklet on plant based nutriton. If you have any problems finding it, I can find it for you.

    Thanks a million Sandra :T:T:T ... for the encouragement and the practical info.

    I haven't made the transition yet - I'm using up the non-vegan stuff I've already got here but I'm only buying vegan foods now. :)

    I do indeed have organic flax seeds which I SHOULD be using on my porridge.:D But I haven't been eating either porridge or flax seeds lately - very naughty.:o But if I can get back into the habit of having porridge (made with water), ground flaxseeds, some raisins and a glass of juice for brekkie then that will be a good start to my day by the sounds of it. I grind them in my pestle and mortar and it seems a whole lot of effort first thing in the morning so I've been just grabbing bread. It's not that big a deal though - I should just stop being lazy about it.

    And I love almonds ... must buy some as I have none. The problem there will be restricting my portion size. :)
    I'm slowly working my way through this whole thread and I saw that book mentioned a few times. It's not in the library but I'll see if they have something similar till I can afford it.

    I ordered a vegan magnesium and calcium supplement so I can be sure I'm getting enough till I have a better idea of what I'm doing. I now know a few different vegan meals and I have an idea of what foods are rich in what. But I'm not well-up on putting all that together into meal plans that give me enough of everything. The meal plans I've found online have stuff I'm not keen on but never mind, with the help of this thread I'm sure I'll be up to speed in no time!

  • Since going vegan I have totally fallen in love with greens. I like to have them at least once a day and often more. Some ideas for using them up:

    Add a handful or more into a smoothie for super healthy breakfasts (don't panic the fruit flavour covers the green taste).

    Fry up some greens with garlic (and cherry toms if you fancy it) then mix in a little tahini (thinned with a bit of water/oil) and serve on toast for snack/light lunch.

    Add a few leaves of whichever greens you have to stews, soups, curries, risottos, etc. Just chop/rip them to size and pop them in right at the end so they just wilt nicely.

    Use them in a salad. Most greens are really quite tasty raw and you can soften them a little by marinating/massaging them in a salty/vinegary dressing if needed.

    That helps a lot - thank you Twinkle_Star! :T I'm definitely going to try those ideas

    What kind of greens are the best nutrition-wise? I got some spinach today so will be using that. And some rocket - not sure if that counts as a green for iron etc. It tastes nice though.

    I also picked up some nutritional yeast - I put a tiny bit in a blob of oil and lemon juice to make salad dressing and it was nice.

    I also got some red cabbage just cos I liked the colour of it. :) It seems to be the same as white cabbage texture-wise so I was thinking of using it for a funky-coloured coleslaw. Not sure how good it is nutritionally but at least it will count towards my 5 a day (which I hope will become 9 a day).
