Flapjacks, what went wrong??!!

I made a batch of flapjacks this evening and used about 1 1/2 oz extra syrup, just to use up the tin. Now the whole batch is to stodgy.
Is there anything I can do to toughen/harden them up? If no-one has any ideas, it looks like birds will be well fed tomorrow :(

  • Rather than throw them away, I would try mashing them up, mixing them with an egg, and re-baking them. Egg sticks most things together! If the mix looks a bit too floppy with the egg in, throw some flour into the mix. Put some more currants in as well.....the worst that can happen is that you have to add a lot of flour and will end up with oat cookies - well, that's what I reckon, anyway! (The ingredients will be oat cookie ingredients, after all!)

    Worth gambling an egg and some flour? I think so! Try 10 mins at first but be prepared to keep returning them to the oven for up to 18-20 mins in all.......

    Hmmmm now I usually have the opposite problem where they set so hard you almost break your teeth biting into them :rotfl:

    Maybe I should add more syrup to mine :confused:

    How about using them as a crumble topping over fruit, or in some yoghurt as a bit of extra crunch? ;)

    I like the other idea, I'll try it in the morning. Blitz them in the blender with a bit of flour. Hubby allergic to egg. Mind you he shouldn't eat them at all, far to sweet for a diabetic!!!!!!!!

    Out of interest, how long did you cook them and at what temps? Also what recipe did you use? Maybe one of us could pinpont where it went wrong so it doesn't happen again? :confused:

  • 3 oz butter ( marg)
    4 1/2 oz rolled oats
    1 dessert apple, grated
    3 1/2 oz soft brown sugar
    2 oz golden syrup
    1 oz desiccated coconut


    grease 8 in square tin. Mix together oats coconut apple, stand for 5 mins. Heat butter, sugar & syrup in a saucepan til just melted. Stir into mixture. spread into tin and press down. Bake for 20mins or until brown. Remove from oven, leave 10mins to cool down, before cutting into squares.

    I doubled up ( being greedy!), and used up the extra bit of syrup. Far to runny!
    This morning added some flour..................just taken them from oven...................and they are to dry!
    Looks like crumble topping it is then..............

  • Awww, sorry it didn't work. Enjoy your crumble (some free blackcurrants still left on the bramble bushes if you look hard/live far enough North! :))

  • Looking at that recipe there doesn't appear to be enough oats in it, but then you've got the coconut on top of that too. I usually work to a rule of thumb of adding enough oats to equal the weight of the butter and sugar combined - i.e. 4oz each of sugar and butter and 8oz of oats - with a couple of tablespoons of syrup and any spices/dried fruit if we fancy it.

    But, as I said earlier, the last couple of times I've made it it's ended up setting rock hard and I've not figured out why yet as it's the same recipe I've always used :confused: (I've a feeling this cooker runs slightly hotter than my last one though, so maybe I'll try it on a lower heat next time)

    I've not tried adding fresh fruit though so I'm wondering if your problem is anything to do with the apple being a wet ingredient :confused:

    I thought I would use up the Ready Brek sitting around in my cupboard (bought on special offer, even though I'm not a big porridge fan :o ), so I just made some flapjacks and some hobnobs (from an OS recipe).

    Disaster! They have both turned out really dry. I kind of knew things weren't right as I was making them, but I didn't know what to do, so I carried on anyway. I think maybe the Ready Brek must be more absorbent than normal oats? :confused:

    The hobnobs are still biscuit-like, and would probably be ok if I put them with ice cream as a dessert, but the flapjacks are beyond rescue. It looks (and tastes) like crushed up weetabix!

    It seems a shame to throw it away though. I'm sure there is something ingenious it could be used for, like a topping for something - I just can't think what.

    Any (veggie) ideas gratefully received...
