Coconut rice pudding in the SC

Just wanted to say that I made coconut rice pudding in the SC tonight and it was completely and utterly fab. I served it with a few slices of tinned mango nad the smallest scoop of ice cream. Yum yum.
All I did was replace some of the milk used with a tin of cocunut milk and added
some coconut as well. Smells lovely when cooking and the whole family were dead impressed.

Coconut rice pudding.
1 can of coconut milk
1.5 pints milk
5oz pudding rice
2oz sugar
1/2oz coconut
shove in slow cooker for about 5 hours.
Serve with a few slices of tinned mango and ice cream
Thsi is a fairly big pud enough for about 8 people but it will all get eaten :cool:0 -

we do our own rice pudding in the slow cooker, we like it with some dried raisins and sultanas thrown in. they plump up and become really juicy and make it very filling.

haven't succumbed to it yet!(no coconut milk but am shopping today!)
BUT OH brought a bag of misshapes choccies home free from work which was full of chocolate orange segments!my absolute favourite so I gave them a bit of a hammering last night!
never mind, back on the wagon today(well they were freebies!)

I made the rice pudding last night and it was absolutely delicious :drool: :drool: :drool:
We ate it on its own and am already planning to make another to use up the rest of my coconut milk!

This recipe sounds de-leesh-us .... I have the coconut milk, but I also have a question ....
I have a 6.5l MR SC .... and 2 adults, 1 toddler ..... can I still use the SC to make this rice? As I thought the SC had to be filled to half full before using it?
Could I perhaps use a bowl inside the SC surrounded by water, in a bain-marie effect?
