I need some help on what exactly to do with these. Can't believe I have never tried them before. Firstly how do I cook them? Secondly any interesting recipes to make with them?

:wave: Jerusalem artichokes make delicious soup,often called Palestine soup.
Peel them as best you can,some are more nobbly than others.Chop or slice.
Fry a chopped onion,and some chopped bacon till soft,add artichokes and cook till they start to soften.Then add stock(chicken or veg),simmer until all is soft.Blend,add milk or cream if liked,or water if the soup is too thick.
Sorry,not a very precise recipe,I tend to make soup by eye.Delicious flavour though.The bacon really complements the artichokes.0 -

Help please! I've been given a big bucketful of Jerusalem artichokes and just don't know where to start with them. What strange things they are! I've found a few recipes but don't understand how to prepare the things...do you peel 'em, scrape 'em, scrub 'em?? Do you pull off the 'babies'?? Are they worth all the hassle?? Any artichoke experts around to help??Learn the rules so you know how to break them properly!0

you can use them wherever you might use any other root vegetable. They make especially nice soup. They have a nice mushroomy flavour.
