    That sounds scrummy Thirzah. I happen to have 3 lemons in the fridge (needed one, bought a net of 4 you know how it is) and some chopped walnuts in the cupboard. Will add dates to Saturday's shopping list :P

  • I can't post the link but if you go to thepinkwhisk.co.uk there is a gorgeous recipe for Chocolate and Peanut Butter Bars. Pink Whisk is Ruth who was runner up on first series of Great British Bake Off. Lots of scrummy recipes.

  • Here's a good traybake we have made for decades upon decades - I won't put the recipe cos of copyright (dont even know who originated it all those years ago) but the cooks among you will get the gist if I tell you how to make it

    Make a shortbready base as you would for caramel squares - bake it lightly
    Chop some glace cherries, dates, walnuts/almonds and add in some raisins and roll them in brown sugar
    Throw them over the base so there is approx one chunk for every centimetre
    Mix up a meringue topping
    Spread over the cherries etc letting it sink over them so gaps appear
    Sprinkle with granulated sugar and bake at 200 until meringue browns but is still chewy
    allow to cool and crisp up
    Enjoy!

    Hubby and I have been hunting all evening for a tray the correct size to make tray bakes.
    Could anybody point me in the direction of one for under £10 (preferably WAY under!)

    i bought the "disposable" foil ones from asda, less than £2 a pack for 3
    i've been using mine for almost 2 years:o
    i take my traybake out to cut it, i dont cut it in the tin, it would score the bottom, just soak them and they are like new:)

    They will be fine. I would line them with greaseproof or tinfoil every time to make sure they last longer tho. I've had loads over the years and finally decided to splash out on the Lakeland ones because I do use them every week.

  • I would also recommend keeping an eye out in TK Maxx if you have a branch near you. They do really good makes of cooking stuff at much reduced prices - especially at clearance time.

    I've got two 23 cm square tins that I use for tray bakes - I'm pretty sure they were well under £10 and they are fantastic.
