I have rashly offered to make some large savoury tray bakes for a buffet and need some inspiration as to what fillings I can use! Two of them have to be corned beef & potato (a family favourite and no occasion complete without them!) but what to put in the other four? I did think two with cheese, potato & onion but does anyone have a favourite recipe? And what to put in the other two, does anybody have any ideas?"If you dream alone it will remain just a dream. sausage and onion? Get some decent quality sausage meat, make up some sage and onion stuffing and fry some onions then mix it all together. I sometimes do this as a pie and its deeelish! Also nice with tomatoes added too (tinned or fresh but well drained if tinned).0

It's a filling for large pastry tray bakes I am after, to cut up into large slices. A pan of chilli and a bolognese bake are already on the agenda but thanks for the suggestion. The sausage & onion bake sounds an idea to think about. Any more ideas anybody - the trays I will be using are approx 14" x 10" if that's any help!"If you dream alone it will remain just a dream. what about using a quiche filling? Not sure how deep they are, but could be good if you need a veggie option.0

How about cheese, leek and potato, based on this recipe - it's tried and tested (by me, anyway!) and utterly delish!
Thinking about it further, I'd imagine most savoury pie fillings would work as long as you make them quite thick. Oh, and could you send me a slice of the corned beef and potato one, please?Back after a very long break!0 -
