chinese barbecue sauce

Hi
Does anyone have a recipe for chinese barbecue spare ribs.

I have some pork chops that I thought I would chop and do in the slow cooker with chinese barbecue sauce, serve with noodles and stir fry veg.

Also any other chinese take away recipe secrets, please. I do love a chinese takeaway, but I 'm also hoping to tweak them to make them lower calorie.

    This is a recipe i use for spare ribs,
    2il spare ribs,
    6 tbsp soy sauce,
    6 tbsp sugar,
    2 tsp ginger,
    1 onion, peeled and chopped,
    3 tbsp wine,
    Put all ingredients into a pan with 1 1/2 pints water, bring to the boil then turn down and simmer for 45 mins, turning the meat occasionally. Turn up the heat and boil for 20 mins uncovered to reduce the sauce. Got this from a MSE thread, but not sure where!!!!

    I use a similar recipe to catowen
    basically Soy Sauce, brown sugar and wine or wine vinegar usually adding garlic, ginger and onion if I have them in :)

    I use similar old Delia barbq sauce recipe from the big black book and it's yum.
    Add soy suace ( or tamari) wine or cider, mustard, fresh garlic, ginger, tom puree

    Does anyone have a recipe for chinese barbecue spare ribs.

    Marinate pork ribs in hoi sin sauce, yellow bean sauce, five spice, crushed garlic and rice wine. Place into large roasting tin, add a splash of water and cook at gas mark hot for 40 to 45 mins. Remove ribs and deglaze roasting tin with chicken stock. Add another drop of hoi sin sauce. Bring to boil and thicken with cornflour solution.

    Eat without licking fingers..... :p

  • Noozan I have a number of delicious recipes calling for Yellow Bean Paste and don't seem to be able to get it these days. Even tried small chinese supermarket- have you seen any online or at popular supermarkets recently?

  • BBQ Spare Ribs/chops/chicken
    Two big tablespoons hoisin sauce, 1 tbsp sugar about 1/4 pint of water. Bring to the boil stirring all the time, thicken with cornflour and pour over spare ribs, chops or chicken. Bake in a hot oven till the meat is well cooked and crispy on the edges.

    Chicken Chow Mein
    1 Chicken breast thinly sliced
    1 large onion thinly sliced
    1 chopped clove garlic
    Slice fresh ginger finely chopped
    Beansprouts
    Cooked noodles
    About 1 tbsp soy sauce
    Fry the onion, chicken, garlic and ginger until the chicken is cooked, if you slice the chicken very thinly this will only take a few minutes. Add the beansprouts and stir fry until heated through. Repeat with the noodles. Sprinkle in the soy sauce and stir fry for about 1 minute longer - serve!

    Chicken and Cashew Nuts
    1 chicken breast finely sliced
    About 1tbsp cashew nuts (Unsalted)
    2 sticks celery sliced
    1 Carrot thinly sliced
    bunch spring onions cur into 1" lengths
    1 clove garlic chopped
    Slice fresh ginger chopped
    1 tbsp soy sauce
    1/4 pint chicken stock (from a cube)
    2 tsp cornflour
    2 tsp chinese rice wine or dry sherry (optional)
    Mix the cornflour with the soy sauce and rice wine if using, and blend in the stock - set aside. Stir fry the chicken breast, onions, celery, garlic, ginger and carrots until the chicken is cooked through. Add cashew nuts and stir through, add the soy sauce/stock mixture making sure you stir constantly, bring to the boil and serve.

    Beef and peppers in oyster sauce
    An 8oz piece of frying steak cut into thin slices
    1/2 green pepper/s chopped into chunky pieces
    bunch spring onions cur into 1" lengths
    1 clove garlic chopped
    Slice fresh ginger chopped
    1 tbsp soy sauce
    1/4 pint chicken stock (from a cube)
    2 tsp cornflour
    2 tbsp Oyster Sauce
    Mix the cornflour with the soy sauce and oyster sauce, and blend in the stock - set aside.
    Stir fry the steak, onions, peppers, garlic and ginger until the steak is cooked through. Add the sauce ingredients and bring to the boil stirring constantly - serve

    Egg fried rice
    Cooked long grain rice - preferably left to get cold, though I often do make this with freshly cooked rice.
    2 eggs - beaten
    Soy Sauce
    1 tbsp oil
    Heat the oil in a wok/large frying pan, add the eggs and as they are just beginning to set, stir fry them, breaking them up into small pieces. Add the rice and stir any fry until thoroughly heated. Sprinkle generously with soy sauce whilst continuing to stir fry.

    I get mine in 2 litre cartons from a chinese wholesaler but you can get them online here: http://www.wingyipstore.co.uk/find.php?search=yellow+bean+sauce&criteria=product It's 85p for 450g (not sure about p&p though). It's a paste rather than a jar of cook in suace so a little will go a long way. Empty it into a jar and it keep in the fridge for ages.
