I make this potato cake, its lovely when slightly warm but not very slimming!
1 bag old potatoes approx 2.5kg
1 mug sugar
1 mug plain flour
1 small bag sultanas
1/3 tub mixed spice
1/6 block lard or marg
peel & mash potatoes, cook till very tender, mash with lard or marg then stir in the rest of the ingredients, sultanas last. make lines with fork across the top.
then put into 2 trays (the type you bake traybakes in) & cook in medium oven for about 25 mins or until browned on top. then allow to cool, sprinkle with sugar & cut into squares.
sorry the ingredients are a bit vague but it doesn't seem to matter that much to the recipe as long as you use old potatoes, I used to watch my mother-in-law make it but sadly shes no longer around & never used scales anyway!

Oooh reading this thread made me remember a (1970's) cookbook I've got by the potato marketing board - Great British Potato Recipes -101 ways with Britain's favourite vegetable. There are 19 different recipes for cakes, biscuits and bread, most only use a small amount of potato in addition to flour, however there is a recipe for orange and potato pudding that looks yummy (a bit souffle like) that I will try and then report back. Apparently the potato improves the texture and keeping quality of the cake etc.I like to live in cloud cuckoo land :hello:0

Well I finally got round to making ORANGE AND POTATO PUDDING!!
and it was very nice too. Here's the official recipe, supposedly for 4-6 servings-
4oz softened butter or marg (125g)
1lb cooked potatoes, mashed and sieved (450g)
2oz caster sugar (50g)
1tsp salt
4 eggs, size 3 seperated
2 tbsp plain flour
1 orange, finely grate the rind and squeeze the juice
1 tsp orange essence
2 oz chopped walnuts (50g)
Stir the butter, sugar and salt into the potato. Beat the egg yolks and add to the potato mixture. Make a paste from the flour, orange juice, rind and essence and then mix this into the potato. Stir in the walnuts. Whisk the egg whites until stiff then fold into the mixture. Spoon it into a greased souffle dish and cook at 180C/350F/Gas mark 4 for approx 55 mins until firm to the touch. Serve immediately.
Right, I thought the quantities all sounded a bit generous for me and DH so I halved the quantities. I didn't add the salt or walnuts (DH doesn't like them). I don't have any orange essence so I scraped the flesh from the orange halves after squeezing out the juice. Instead of making one large pudding I split the mixture between 4 greased individual ramekins and cooked it for approx 25 to 30 mins. It made 4 ample portions and was lovely with a small scoop of vanilla icecream. I've got 2 spare so hopefully will warm up OK tomorrow or possible I could freeze it for a nice but unusual valentines day pud.
