Years and years ago i remember making a cake which had potatoes in it from a recipe on blue peter
this is over 20 yrs ago.
It was really nice, moist and a little stodgey (SP) but i dont have the recipe.
Ive done a quick search and Ive come up with this and just wondered if anyone else had ever tried anything simular to it?
It would be a good way to use up those old spuds
1 lb (450 g) potatoes, peeled, mashed and passed through a ricer
1 cup (110 g) icing sugar (confectioners sugar), sifted
110 g (4 oz) candied peel (candied fruit), chopped
1/2 stick (2 oz) 50 g butter, melted
1/2 tsp vanilla essence
2 medium eggs, separated
milk
1. Mix together the potatoes, icing sugar, peel, melted butter, vanilla and beaten egg yokes.
2. Whisk the 2 egg whites until stiff and fold into the mixture. Add a little milk if the mixture is too stiff, then pour into a greased 20cm (8 in) cake or loaf tin.
3. Bake in the oven Gas mark 4, 350°F (180°C) for 45 minutes.
Although the one I made didnt have peel in it.

Somewhere I have a muffin recipe that you add a raw grated potato to, makes it very moist and tastes much more 'sinful' than the recipe really is. Plus potato cakes of course, but they arent quite as decadent as cake!0

How about this, with chocolate as well.
1 potato, cubed
1 cup butter
2 cups packed brown sugar
4 eggs
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1 cup milk
1 (1 ounce) square semisweet chocolate, melted
1 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C). Bring a saucepan of water to a boil. Add potato and cook until tender but still firm, about 15 minutes. Drain, cool and mash. Grease and flour a 10 inch Bundt pan.
Cream butter, gradually add brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in mashed potatoes.
Combine flour, baking powder, cinnamon, nutmeg, and cloves; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Stir in melted chocolate and pecans. Pour batter into a prepared 10 inch Bundt pan.
Bake at 350 degrees F (175 degrees C) for 1 hour or until cake tests done. Cool in pan 20 minutes; remove cake from pan, and cool completely before serving.0 -
