Have you checked batter for fried fish? or savoury batter questions etc?
i wouldn't make battered fish at home, so can't offer any advice myself. Will be interested to see what others say though

It sounds like there is too much fat getting into the food.
Are you sure that the fat is hot enough when you put the fish in? It needs to be hot enough for the batter to seal round the fish straight away.
Another thought - have you tried having a hot oven on standby and popping the fish in there for a few mins to make sure it is fully dried out and crisp?

I think the fat was hot enough. It sizzled as I put it in. Maybe I will make it hotter and see if that helps. I tried putting them in the oven before when the family weren't ready to eat, and they still went soggy.

I also think that fat wasn't at optimum temperature (180c).
Adding corn flour helps too

could it be that your fish is too wet??? and there is literally steam coming out of it soacking into the batter from the inside??? (just a thought?)
was the fish frozen before you brought it? maybe try drying it off well before battering it???
Having never cooked this at home this is just an idea and not advice from exp in any way0
