My husband caught a large cod which I want to deep fry. Can someone tell me how to make the batter for the fish.

My mother always swears you have to use COLD water. My Nan used to own a fish and chip shop......ohh I remember the days.....sorry bout that. It is basically flour, self raising, some salt and COLD water. Sieve the flour and salt together then add the water slowly as you whick it. Don't make it too runny, perhaps thick enough so it would just start to run off the back of a spoon!

Definitely something fizzy .... carbonated water will do ... beer (even lager!!). It makes the most wonderful light batter and you can't taste the beer - pity?

Think "tempura batter" and that's pretty much the result you get.
I think for a chunky more robust fish like cod, the traditional "English" batter works better though. You need a "thicker" batter to compete with the meatier texture of the fish.Warning ..... I'm a peri-menopausal axe-wielding maniac0 -

I've got some cod fillets in the freezer and, instead of making another fish pie, thought I'd defrost them then batter 'em up and stick them in the fryer.
Now I've heard that the best batter includes beer. Is this correct? Can any lovely person give me a little recipe on how to make such a batter?

If the batter includes something fizzy that makes it so much better so beer or sparkling water will do.

Hello everyone!
I normally use a tried and tested beer batter when making fish and chips - BUT my shopping is getting delivered on sunday and I don't want to have to go to the shop tomorrow as I have a busy day sooooo....
Does anyone know if a 'tempura' style batter with just flour and water will work on fish if I flour it up and season it a bit? Or do you have a very basic recipe that you know works?
I only have plain flour, milk, water, various seasonings - no eggs left and no beer! Otherwise I'll have to do ordinary fish but oh has his heart set on battered!
