    flour, water, salt pepper, and vinegar!
    or just flour and water works, it often comes up crispier than beer batter too.

  • The hairy bikers did chip shop batter don't know how to do alink through but if you search hairy bikers recipes it takes you to the bbc site and you can print off the recipes , hope this helps:)

    I do have a batter recipe that I usually use but on this occasion I wanted to just use up what I had in the house and was wondering if a very basic recipe would work as well. Turns out it does!

    Thanks everyone for all the batter recipes on here, but my problem is 'soggy' batter.
    My batter looks fine, and tastes fine..... the problem is, it only stays crispy for about a minute after I take it out of the oil. It literally goes soft and leathery very quickly, as if I'd put it in a plastic bag after cooking and steamed it!!!!
    What am I doing wrong? And don't suggest beer, as we are teetotal. Thanks.

    I know there are threads on fish n chips, but I can't find the answer I need, and no-one has answered in the older thread.
    My problem is......My fish cooks beautifully in the batter and comes out nice and crispy. However, within literally a couple of minutes, it has gone soggy, as if I steamed it. It is leathery and soggy by the time it hits the table. I put it on kitchen roll for a minute, then on the plate.
    I really want to do some for lunch today, but need your help. Thank you in anticipation!
