I've not tried it with syrup in the base though but I use basically the same one (with lemon zest as well as juice)
For a bit of a wow, push some raspberries through a sieve with a couple of spoons of sugar for a coulis to go with it.
I promise you it's a gorgeous recipe and I know a lot of people who love it because they don't like cheese.0 -
This is my own cheesecake recipe....and is loved by many.
500g digestive biscuits, crushed
250g butter
4 tubs cream cheese
300ml double cream
50g icing sugar
1-2tsp vanilla essence
Melt the butter and add the biscuits. Press into the bottom of a dish.
Whisk the double cream until starting to firm and add a tub of cheese at a time. Add the sugar plus more if required. Whisk after each add. Add the vanilla essence. (Can also be mixed by hand just takes a bit longer)
Spread on top of the base and put in the fridge to chill.
Add topping.
For topping I sometimes add pureed strawberries or raspberries to a small amount of jelly, then add some white chocolate shavings. You might just want to slice strawberries as you have limited tools.0 -
I was going to suggest an Eton Mess type dessert. its the time of year when the strawberries, raspberries, cherries etc are at their best - why not do fresh berries with chantilly cream? you could also do a berry sauce if you MUST cook something! or serve the berries and cream on a lovely light sponge base.

Thanks for the suggestions guys! Unfortunately, I don't have a whisk, electric or otherwise, which makes creamy type desserts that bit harder. Though I could employ my husband as chief fork whisker, that should keep him occupied for a while!
Have had a look at the no-cheese cheesecake though and it looks very straightforward. Provided I can find something to put it in I reckon that might be a winner.
I know you might say that they are coming to see us and not eat our food, which is completely true, but I have a need so show that we're not doing too badly despite our current living conditions. No idea why I need to do this, but can't shake the feeling so am going with it!

A big wooden spoon will be fine for the cheesecake - you just have to beat it.
I use a springform tin - you can't really get away with anything that doesn't have a "loose bottom".... Ooh err!0 -
Could you make a really easy banoffee pie?
You could boil a tin of condensed milk for a few hours seeing as you've got
You'd just need crushed digestive biscuits and whipped cream and sliced bananas.
Oh and I'd invest in a regular hand whisk if I were you. Very handy and with determination you can easily whip cream / egg whites by hand. Good exercise too.

If I need to make a really really easy dessert I just put all the banoffee elements into cocktail glasses and serve them like that.
Eton mess would be nice in cocktail glasses too but you'd have to buy pre-made meringues.

Following the expert advice received, I made this recipe and it went down a storm!
Only slight problem was that I discovered at 10pm on Sunday evening when I came to make the topping that I'd only bought half the required amount of cream(I blame baby brain). Emergency phone call to my Mum
establishing the contents of my fridge and we replaced 300ml of double cream with one Ski yoghurt, apricot flavour! Result was very nice, though have no idea how different it would have been otherwise...!
