Tarte Tartin! Honestly, it is not difficult. And so tasty...
I use this recipe:

But - I only make tarte tartin, not the ice cream. (and no, thyme is not a must)
You can also prepare it is advance and just pop it in the fridge, and then in the oven when you want it (I have done that and it worked fine).
You can add some vanilla ice cream if you would like it extra special...Spring into Spring 2015 - 0.7/12lb0 -

The pineapple upside down cake is easy , just a line a greased heatproof dish with pineapple rings , put either a spoon of red jam or a glace cherry in the centre of each , then weigh two eggs, and use the same weight of S/R flr, butter and sugar and pinch of salt, cream the butter and sugar together , beat each egg in till light and fluffy, then fold in the flour and salt with a metal spoon.... spread the mixture over the pineapple and bake at 170* 30mins or till firm on top.... wait till its cooled a little then invert onto a serving dish... serve with ice-cream or custard..#6 of the SKI-ers Club :j

How about some of those little party cakes that the supermarkets have this time of year. You could get a small selection and put them all on a big serving plate and then everyone can help themselves whilst chatting.2 adults and 3 children DD (14), DD (12) & DS (10) :smileyhea and 2 mental beagles.

Meringues can be made a couple of days before and then served with some defrosted rasps (good value in the frozen section) and some creme fraiche“the princess jumped from the tower & she learned that she could fly all along. she never needed those wings.”
