    Serve immediately over ice cream, and enjoy!

    I'm afraid I've never made it...I bought it ;)

    Carte D'or do it but not everywhere sells it...last I saw was it, it was in waitrose.

    Hmm, I would imagine coconut icecream could be made with the addition of coconut cream/other coconutty goodness to a normal icecream recipe like this one:

    6 egg whites, whisked till stiff
    300ml double or whipping cream, whisked to a very thick pouring constency- should JUST pour.
    1 standard size tin of condensed milk.
    Vanilla essence/ yoghurt / coconut cream or other flavourings of choice

    Mix condensed milk into the cream, but leave a tablespoonfull or two in the tin if planning to eat it plain/vanilla, as it can be very sweet. Add flavourings. I usually add about half a big tub of greek yoghurt to calm it down a bit. Other flavoured yoghurts are nice too. I think coconut cream, and maybe powdered coconut would work - and maybe dessicated coconut on top for decoration? Or how about chopped up bounty bars? Mmmmmmm!

    Fold egg whites into the creamy mixture, then either use an ice cream maker to freeze it, or put in a container in the freezer and stir well every 20-30 mins until it is too stiff to stir. I like to let it defrost slightly before eating, as it does freeze very hard after a while.

    Obviously, with raw egg whites this isn't suitable for those with a fragile immune system, like babies or the elderly. I think you can get pasteurised egg if you want, but I have never tried it.

    I'm hoping you can provide me with some inspiration for a pudding / dessert for some friends visiting next week.

    Our house currently resembles a building site as we are doing fairly major renovation work. As such, all my recipe books are in storage and I'm lacking inspiration for something I can cook, ideally the day before or morning of, that has a certain amount of "wow" about it. My husband thinks I should just buy something, or maybe attempt to make a pudding but have a bought one in reserve just in case. Where is the fun in that?!

    So, the facilities at my disposable are a two ring camping stove, a microwave & a slow cooker. I have various pans etc but no real mixing bowl or similar.

    I was thinking of doing a dessert in the slow cooker but reading recipes it looks like they require making in a basin that is then put in water in the slow cooker which I don't have the necessary to do.

    Any ideas people? Am doing a food shop tomorrow so can get in any necessary ingredients.

    Am cooking paella for main if that makes any difference - a great one pan dish!

    What about trifle or cheesecake?

    This is a recipe my mum used to make in the 70's and I still make it today:

    You'll need a couple of packets of gingernut biscuits (tesco do value ones which are very cheap), orange juice, whiskey/brandy (optional) and some whipping cream.

    Dip each biscuit in orange juice then spread one side with whipped cream and sandwich the biscuits together. Keep doing this until the soaked biscuits form two long rolls. Use the remainder of the cream to cover the rolls of biscuits and sprinkle with flaked chocolate, chopped nuts or fruit. Keep in the fridge for a couple of hours and the biscuits go cake-like absorbing the flavour of the juice. If not serving children it's even better with a decent glug of brandy or whiskey added to the orange juice.

    Have made microwave sponge puddings before, that went down very well with my lot, although not very"posh" is it's that sort of meal!

    Google and lots of recipes come up.

    If I were you I would do an Eton Mess type thing- half greek yogurt, half whipped cream, bought meringue crushed up and strawberries, raspberries and blueberries stirred through. Yum!

    Zabaglione? It's one of my favourite puddings. Like a creamy, alcoholic hot custard, it's rich and yummy. The great thing is it seems so much posher and tricker than it is. All you need is a gas ring, a pan of simmering water and a bowl that sits on the pan comfortably. There are recipes aplenty for this dish on t'internet, but you just need to beat the eggs & sugar like mad until they form a thick, creamy foam. (Use an electric hand mixer on low - it's easier.) Serve in tall sundae glasses, or wine glasses, with an amaretti biscuit or sponge finger to dip - a beautifully sliced strawberry looks pretty, too.
