  • Erm...quick (stupid) question for those of you who blanche and freeze your veg, do I defrost them before cooking or simply cook from frozen? :D

    I am planning on making the Delia bread sauce, but wondered if I can make it ahead of time and freeze it.

    Trying to limit what I do on the run up to the day!

    I made that a few years ago on the day before and then re-heated it with more single cream to keep it runny-ish. So nice.

    I just take them out and leave in the fridge (or garage!) overnight then cook as usual. I have cooked them from frozen before and they were fine.

    Hiya

    Quick question, I want to get my veg and pots prepared today. So if I peel, chop and par boil, how do I store it without putting it in freezer? Or would it just be best to peel and chop and then parboil tomorrow? (I have no room in my freezer for anything!!)

    If you peel and chop, leave in a pan covered with water until tomorrow. :D

    I leave potatoes in a large pot, covered with cold water, then cut them up and parboil just before roasting.
    For other veg, I put it in a freezer bag and leave it in the fridge (or the garage, if I'm short of fridge-space). Some veg would get waterlogged if left them in water.

    (We'll be eating ours in about an hour-and-a-half :) )

    My lovely daughter has invited us for xmas dinner as usual..but this year she is in a new house. The kitchen is 5ft square. :eek: Full size oven & hob, but hardly any worktop space at all, most of it is sink. She has 8 people to feed, only 2 of these are small kids. Has anybody got any hints or tips on how to do this without going mad ?:rotfl:

    Serving dishes on the table for potatoes and veg and everyone helps themselves.

    You just plate up the meat.

    Have all the dishes ready to hand and everybody sat at the table waiting.

    Christmas day usually goes very well indeed :D
