GIGGLEPIG: Are you talking about people coming for one meal or coming to stay with you? Are they travelling far? Is there a reason you don't feel hubbies family would be happy to bring food with them?
Ok, now for some practical suggestions - I hope.
If you have a slowcooker, put stewing/braising steak, chopped onion, chopped carrots, and potatoes in with some oxo cubes, mixed herbs, salt and pepper and some wine or balsamic vinegar. Add some water and turn on. If no slowcooker you can do it in the oven in a large casserole. If it needs thickening up at the end add some bisto. You could have the carrots and onions chopped ready and left in Tupperware in the fridge and the potatoes will keep ready peeled in water for a couple of days if you change the water each day.
Would you have room for a lasagne in the freezer? If you could fit that in, you could prepared it now.
A big pot of chilli or bolognaise wouldn't be too difficult for hubbie to do. Again, onions etc can be prepped and left in the fridge.
Home made soup using dried soup pulse mix, and a packet of frozen mixed veg and couple of stock cubes, with some of those part baked rolls.
