At the moment I'm totally addicted to Morrison's pre-marinated pork chops, they are the red ones that taste like spare ribs you get from the chinese takeaway. They are gorgeous but quite an expensive way of buying them!
Just wondering if anyone has a recipe to make that kind of marinade so I can do my own or even buying a ready made marinade will work out cheaper!
Would be grateful for any recipes or suggestions of which one to buy!

I think that I have finally found the knack of making spare ribs.
The first stage is to boil them in a big pan of water to cook them. I never did this until I read it in a book and mine were always slightly raw (especially the bone bit)
They do not look attractive boiling (I hate to say this but it reminded me of dog bones!!) Do not let this put you off.
When looking cooked, drain them and place in a bowl.
My marinade is a lots of soy sauce, lots of honey (will give that stickyness) bit of salt even a quick dash of worcestershire sauce.
paint it on them and leave for 30 mins. Put on oven tray and put more marinade on. Cook at a fairly high temp - if you remember paint over again.
They should be nice and brown and sticky!

Cook the ribs in the slow cooker first then finish off in the oven.
Marinade:
3 tablespoons of dark soy sauce
1 clove of garlic
1tablespoon lemon juice
2 tablespoons of brown sugar
1/2 inch grated ginger.
mix it all together and spoon over ribs. Works pretty good on salmon or chicken legs. I find it useful on frozen chicken portions which seem to lack taste.

I totally agree about not just coating and roasting/baking ribs. The meat should fall off the bone and not have to be nibbled at.
I did the boiling thing and it worked a treat but I also cover raw ribs in sauce of choice and place in foil. If it's a bit dry add a splash of water. Wrap tightly and cook. This is effectively steaming them to cook them first, just like boiling. Then open foil for the last half hour or so to let them dry off and crisp up a bit.0 -

I marinaded ribs recently with brown sugar , fresh orange juice and brown sugar and they were delicious! Really nice.
There is a thread about chinese spare ribs. I'll add your thread to that one later, to keep all the suggestions together.
