    Turkey (or chicken) broccoli bake coming up, (work on commission you know!)

    Casserole dish cover in broccoli slices, I use frozen roughly thawed under the tap. If using fresh don't bother cooking it. Cover the broccoli with diced turkey or chicken.

    Melt 2 oz butter stir in 2oz p flour and add 1 tbsp curry powder (making a roue) stir in 1 pint of chicken stock. Stir until boiling and thickened. Remove from heat add 200g tin of evaporated milk, 4 tbsp mayonnaise, 2 tbsp lemon juice and 2oz grated cheese. Once cheese has melted pour over turkey/chicken. Sprinkle with breadcrumbs cooked in butter then bake in the oven at 190C.
    Its a bit of a faff to make lots of pans but well worth the effort and it can be frozen, so if you can pick up any reduced chickens and roast them and then use the meat for this recipe excellent! Enjoy.

    ooh, I would never have thought about using evaporated milk! I will give it a go over the next few days!

    Have just put a big bit of steak (reduced price of course) in to marinade with vodka, olive oil and black peppercorns.....then will flash fry tomorrow and have with green veg and new potatoes - heaven! This is a real treat and I would have done it for boxing day, but OH was working, so Sunday lunch sounds a good alternative.

    I have done next to nothing today, but have vowed to clean the kitchen before the evening is out - just to make a bit of an effort :o

    Have been to Tescos (yet to tackle the kitchen) and managed to get some reasonable reduced bargains which have gone in the freezer. Still spent £55 though, but hopefully I am building up plenty of supplies for the whole of January - I did make a meal plan before I went, so haven't bought anything other than reduced meat from my list.

    I have felt very lazy today - I could have done loads, but have done absolutely nothing. I will make up for it tomorrow by going for a nice long run....but for now I will just be a lazy mare :o

    but being lazy feels such a waste! I could have gone for a nice long run......I could have got on with some much needed housework, or done some paperwork........but instead I have done nada except go to Tesco.

    good job I didn't make a list this morning - it would be looking pretty sorry for itself right now :rolleyes:

    Morning!

    One of my scratchcards (double scratch today, guys) gave me a lovely £5 - I only reached payout on it yesterday and withdrew money from it then, so I am already half way towards pay out again today.......not a bad start!

    Today I am going to go for a run this morning and do a little more on dooyoo, plus start doing the financial audit this afternoon when OH is at work. I have some paperwork that MUST get done over the next few days, and as I am back at work in the morning, I really do need to get it done today otherwise it will be waiting yet another week.
