well if I can find room in the shed I miiiiiiiiight have a go at looking for Demi-johns and all the other gear tomorrow... soooooo would love to make my own wine but space is a problem

I'm going to put this first lot in the bottom of the airing cupboard, should have room for one or two more in there. Might have to put one in the utility room. Vino going great i sort of did what gooey bob did but added the berries to the sugar and water to get a bit more juice, but i couldn't be doing with leaving them a few days!!!the quicker the better for me chick:D im collecting hawthornes tomorrow, for another gallon hehe.......pats :T0

Justback from blackberry picking with next doors. Met a lovely rambler who got chatting and mentioned that he makes his Sloe Gin with 1 pint glass pricked sloes, 1 pint of gin, 4oz demarera sugar. Stick in a 2 litre softdrink bottle and shake everyday for 2 months. Well I have something on the go! Not sure if I did the right thing but thought I would be adventurous.
I used
4lb blackberries
1kg sugar dissolved in 1pt water
7 pints boiling water
1tsp pectolase
1 sachet wine yeast
I poured boiling water on the berries, waited for it to cool down, added the sugar then poured through a sieve into a funnel on top of the demijon. Went to pick up kids from school and came back to see it is bubbling nicely. I used to boil up some runner beans with the blackberries, they gave a smoother taste to the wine.
In fact I still have two bottles marked "Jeff Baptism Bramble"; I'm hoping that one day Jeff will produce a grandchild and I can produce them then.
The colour is still looking good - I will let you know about the taste in due course.

Have any OSers made balloon wine? This is quite popular in the US and it looks so easy and fun, I can't wait to try it soon.
Basically you mix fruit juice, water, sugar and yeast and put it in a sterilised demijohn and tie a large balloon over the neck. It inflates due to the fermentation and when the balloon deflates after about 4-6 weeks the wine is ready. There's no faffing about with taps and pipes etc, the balloon allows the release of the gasses and keeps oxygen and dust out. There's tons of recipes around if you google 'balloon wine', I'd be interested to hear of your results if you give it a try.

Well I'm going to pick some Demi Johns up tonight thanks to freecycle and a very kind person. 3 for me and 3 for my neighbour! With a massive glut of blackberries here we're hoping to make blackberry wine, but I anticipate that there might be some with Damsons in too as well as anything else we can lay our hands on
