They should be OK as a stock for soup. If it turns out to be too salty either dilute it (if that won't make it too weak), or set it aside (freeze?) and mix it with your next batch of salt free stock. There is a tip that sitting a potato in a stock while simmering will soak up some of the salt.

Dip a teaspoon in and if it's too salty bung a tater in now :)

would you be able to use diet coke to cook the gammon in?
    ordinary coke is very sugary
  • i put very little water- just enough to cover the bottom of the crockpot - I wash the gammon over, cook on high for about 30 mins then turn it to low and its delicious.
I actually did this with a hand of pork last week, then put it in the oven when i cooked the roast potatoes and it crisped up lovely, Mr HQ loved it!

Just carry on as you would, it'll turn out nice even if it doesn't look the same.

    Honest :)

  • Hi Christina

Funny that as I am cooking my gammon joint later today also. We will have gammon with parsley sauce tonight with creamy potatoes and veg.

What do you want to know?

I've cooked mine using Nigalle Lawson's idea of using cherry coke as the cooking liquid. Add enough coke to cover the gammon (I used half water) and add a quartered onion. I slow cooked this for 4 hours, but it was a small joint, then brush with cherry jam or honey and roast in a hot oven for 20 mins till sticky/crispy. It was lovely, and not at all sickly.

The leftover coke stock is then wonderful for cooking red cabbage.
