180g Digestive biscuits
75g Melted butter
300g Cream chesse / mascarpone
200ml Double cream - substitue some of the liquid for baileys - dependant on your preference of strength
75g Sugar (icing or granulated)
Decorate:
Milk choc melted / grated
Crumble the digestives
Add the melted butter and mix well
Place in a 20cm tin with a push-up base and pat down with the back of a spoon
Mix the cream cheese, cream, baileys and sugar together until smooth
Spoon into the flan ring and smooth the top with a palette knife
Place in the fridge and chill for 2 hours
The basic recipe can be changed to suit your fancy – take out the baileys and add lime juice & zest for example and use ginger snap biscuits for base / use vanilla pods then top with fresh fruit / add raspberries and melted white choc.0 -
