    The first link in my post is from the bbc food site. It contains icing sugar, cream cheese and no gelatine.

    Bailey's Chocolate Cheesecake

    Part of the Furniture 100 Posts Photogenic Combo Breaker
    180g Digestive biscuits
    75g Melted butter
    300g Cream chesse / mascarpone
    200ml Double cream - substitue some of the liquid for baileys - dependant on your preference of strength :)
    75g Sugar (icing or granulated)

    Decorate:
    Milk choc melted / grated

    Crumble the digestives
    Add the melted butter and mix well
    Place in a 20cm tin with a push-up base and pat down with the back of a spoon
    Mix the cream cheese, cream, baileys and sugar together until smooth
    Spoon into the flan ring and smooth the top with a palette knife
    Place in the fridge and chill for 2 hours


    The basic recipe can be changed to suit your fancy – take out the baileys and add lime juice & zest for example and use ginger snap biscuits for base / use vanilla pods then top with fresh fruit / add raspberries and melted white choc.
