Thanks for this, I've got a big bag of carrots that needs using up so it's encouraged me to have a look for recipes.
Can't find the carrot cake recipe I've used in the past but here's Delias selection:
Low fat
Saturday carrot cake
The ultimate (very posh)

Carrot & poppy seed salad.
Just grate the carrots, squeeze over the juice of 1 orange & sprinkle with poppy seeds.
A friend of mine loves a mixture of grated carrot & grated cheese in sandwiches. Sounds a bit wierd to me but he loves it!0 -
also, juice one, add some oil for a face pack.

Another carrot soup recipe:
5-6 Carrots
2 medium sized Potatoes
red onion
garlic
stock cube
Cook the carrots and potatoes until soft (no need to remove the skins off everything just wash well). Can steam / boil / microwave to cook them.
Cook the onion and garlic in a little butter.
Add everything into a blender, add some black pepper and salt.
Add a stock cube to the water that was used to cook the carrots and potatoes (this way you got some of the goodness back that leached out during cooking). Add a little of the stock to the mixture in the blender.
Blend and then serve. Can be frozen once cooked.

You could try making your own coleslaw.
Also use grated carrot to thicken home made tomato sauce for pasta etc.

;D I love carrots oven baked in foil ( works well with turnips, swede, parsnips or a mixture too).
Simply scrape then chop the veg into chunks, place on a piece of tin foil, shiny side in, season to taste and bake for about an hour till tender. All the vitamins and goodness is retained and the natural sugars sort of caramelise the veg round the edges! Lovely mashed with equal quantities of mashed potatoes..usually bake a couple in the oven at the same time.0 -

That's not weird, Lucie - it's delicious.
Use a white cheese to compliment the orange of the carrot. This mixture also looks good (say for a party) in rolled up tortillas with lettuce, then cut up into small sections and garnished with tomatoes on a plate.0 -
